I am going to need to make several casseroles. I'd love some great recipes if anyone can share!!

We are not big casserole people, but here is a vegetarian one that the whole family likes:

DH isn't usually a casserole person...but he loves this one!

Tater Tot Hotdish
1 pound Hamburger (moose burger, turkey burger what ever it all works)
1 Can Condensed Cream of Mushroom Soup
1 Can Condensed Chicken Noodle Soup
Tater Tots
Garlic (Fresh or Powder)
Onion (Fresh or Powder)

Pre heat oven to 425.
Brown meat with garlic and onion. Drain
Mix in both cans of soup Do Not Add Water
Simmer for about 5 mins
Transfer to a casserole dish
Top with as many tater tot as will fit in the dish.
Bake till the tater tots are done. Let sit about 10 mins

Serve and Enjoy



Ok that is the recipe as was taught to me. I also have added a can of olives to the mix and it is great I just crush them up a little as I get them out of the can. You can very easily double and triple the recipe, line a casserole dish with freezer paper or alluminum foil dump in filling add tots to the top and freeze, it is great

Beef casserole is a favorite of mine. Very easy to cook on the stove top or in the slow cooker.

Root vegitables diced.......parsnips (gives it a very sweet taste) carrots, leeks (tastes like mild onions).

Potatoes (2 inch cubes)

frozen peas and sweetcorn.

3 cups (or more, enough to cover everything) water/beef stock or chicken stock

2lb stewing beef.

3tbls ap flour

salt & pepper to taste.

1 tblsp dried thyme

1tblsp Worcestershire sauce

2 tblsp tomato ketchup

2 bay leaves

olive oil


Coat the beef in the flour then brown on all sides using the olive oil in a large pan.
Cover in liquid and for 40 minutes.
Add all remaining ingredients except peas and sweetcorn and simmer for another 40 minutes stiring occassionally.
Add peas and sweetcorn and simmer for last 20 minute.
Serve with crunchy crusted bread!
