I normally plan per week, but am trying to do it for the month to shop better and make things easier. I haven't nailed down specific days yet, but here is a list of what I plan on making for the month. I normally don't use as many white potatoes, but how can you go wrong when they are $.29/lb? Also, have a large amount of ham and ground beef and chicken is on sale this week.

Cottage pie
Roasted chicken with onions and garlic, couscous and some type of green
Corn chowder
Scalloped Potatoes and ham
Chicken and dumplings with mixed veggies and mashed potatoes
Homemade meatballs and bread
Buffalo chicken pizza
French onion soup and some sort of sandwhich
White bean and arugula salad with toasted bread
Southern biscuits (for freezer to pull out for a snack or app)
Garlic pizza with kale and onions
Italian beans and rice
Stuffed shells with spinach and ricotta

If leftover ricotta: Calzones
If leftover beef: taco salads, or taco soup
If leftover ham: ham salad for easy sandwhiches

Breakfast: Oatmeal and bananas, pancakes with blueberries, french toast, or some sort of egg, normally scrambled with spinach, onions and a bit of cheese.

Lunch: Normally left overs, salad and/or sandwhich. DS go-to easy lunch noodles and peas, hummus and pita.

Took a 'break' from TTC and look what happened:  2ndtri.gif!!!!    praying.gif  for a healthy, full term baby to be born August 2012!!  Hoping for a vbac.gif!

I am of no use this month because we are moving this week and trying to use up everything we have in the freezer, etc before moving. So we are having some crazy stuff. I like reading your ideas though.

Mama to (DS 7) and (DD 5), wife to DH

This is so cool seeing other parents' meal plans. This week and next week:

Sun - Quiche
Mon - Tuna Nicoise salad
Tues - perogies and salad
Wed - taco salad
Thurs - pasta with sausage, spinach, tomato, cheese
Fri - salad with beets and tofu
Sat -

I've started a blog where I mostly share recipes that are well-suited to single-parent-with-one-child households on a budget. If interested feel free to check out:

Thanks
