I have $40 to spend for groceries until I get paid next week. Luckily, I'm on WIC, so I've got milk, eggs, tofu, beans, rice, $10 for veggies and fruit and juice covered. We are pescatarian and plan to have a salmon for dinner. We are gluten-free due to my son and me being celiac. Any ideas? Quick--I'm about to go to the store.

My current plan is:
Red beans and Rice--1 lb beans (WIC) and 2 cups rice (WIC), buy veggie bullion cubes for broth.

Clam chowder--potatoes (have), milk (WIC), onion (have), celery (have, need to use up), buy 2-3 cans of clams.

Pizza (Friday night tradition is homemade pizza)--gf all-purpose flour (buy), pizza sauce (buy), mozzerella (buy), pizza yeast (buy), get 1 bell pepper, 1 box mushrooms, and 1 tomato, and a box of pepperoni (for the kids).

Salmon for thanksgiving--buy a salmon, serve with rice (WIC), a salad (lettuce, cucumber, tomato), and a pecan pie. Just need to get a bottle of karo and all-purpose (GF) flour, crisco and pecans.

Any other ideas?

just wanted to comment on something:

pescaterian.... thats an interesting term! i wish I would have known that term when having this conversation regarding meal plans at a summer camp:

m: i dont eat meat, but i cant eat vegetables
t: ?!?!
m: except seafood
t: well, you really think we can serve seafood? its too expensive!
m: (in my head: "well, i only said that for the sake of being open and honest...")

i've since changed, kinda... mwahaha... i eat healthier, i've found out how to use vegetables that actually taste good... and got access to meat that i will eat

anyhow, i wish i woulda known that term






you could make salad? or veggie soup, or salmon soup?

Just a quick look at your menu and it looks like you have no dark leafy greens at all. I would get:

- some kale to saute with that salmon (saute it with garlic and squeeze lemon juice on top, yum) and save the salad for another night.

- some parsely to chop up in that chowder

- spinach to put on your pizza.

The salad is a lettuce mix that includes spinach and leafy lettuces. I also have some collard greens in the freezer, which I'll be cooking as you suggested kale.
