Tacos:
1-2#s ground meat (turkey, beef, venison, goat, whatever its all good
oregano
salt
garlic powder
chili powder
cumin
onion powder

Brown meat in a skillet. When its about half done (so mostly not pink anymore) add lots of garlic & oregano (1-3tsp? I really have no idea, I've *never* measured...), a good bit of chili & onion powders and a dash of salt/cumin. Cook for a couple more minutes till all the way done. Serve in taco shells w/ usual fixings (onion/cheese/lettuce/salsa).

This is a yummy soup I make with "home canned" ingredients:
1 qt chicken
chicken broth
1 qt white beans
1 pt salsa
1 cup shredded cheese

I put the quart of chicken in a soup pan and add a couple cups of broth, quart of canned white beans, pint of canned salsa and heat. When heated, add shredded monteray jack or cheddar cheese. I serve this with crushed corn chips.

Barley Risotto.

1c pearled barley
4c hot stock
1 onion
olive oil or butter(for sauteing)
cooked veggies (mushrooms are fantastic or any leftovers like spinach, eggplant, asparagus, green beans, etc, but they should be warmed up)
cheese (optional)

Cook onions (on medium heat in medium wok) in fat until soft. Add barley and toast until they smell toasty (about 4 minutes). Add 1 c stock, let it cook in completely, stirring constantly. add half remaining stock and cook until completely absorbed, stirring once or twice to prevent burning. Add remaining stock, and allow it to cook down again. Add warmed, precooked veggies and stir until veggies are hot and appetizing. Serve immediately, with cheese if desired.

I don't really have a name for it, because it is so flexible. Just make sure the ingredients "go" together.

1 cup brown rice to 2 cups water or stock, though sometimes we use quinoa.
diced tomatoes
flavored diced tomatoes (such as with chiles, garlic and oregano, etc. your pick)
2 cans beans, drained (type is your pick)
chopped veggies or fruit of your choice
top with cheese and serve with bread and salad.

I vote that spices shouldn't count in the 3 ingredients. Just the big stuff like meat, veggies, rice, pasta etc...

As for our 3 ingredient meal and it is just 3 ingredients...

Italian Sausage Rigatoni

Basically, I bake italian sausage, cook the rigatoni, dump in a jar of sauce (I suggest Newman's Italian Sausage Sauce) over hot ingredients. Stir and serve.

We are really enjoying this at our house.

Other than that... I can't think of any other 3 ingredient meals we make.
