Whatever I make I try to make doubles. If you have the freezer space you can turn any meal into a second one.
meatloaf: I double it and make 2 medium/smallish loaves and use the balance for meatballs. Eat one loaf, freeze the other. Have the meatballs for dinner the next night.
lasagna-make in loaf pans instead of one big one, perfect for freezing or make a big one and freeze the balance in to smallers serving for freezing.
Roast 2 chickens instead of one. this can turn into chicken salad, burritos, tacos, hot open face sandwiches, etc. Never mind all those bones for stock.
