2 cups dry, then soaked overnight red kidney beans
2 slices of bacon (I don't brown it, just throw it in)
1/4 of a small onion diced
1/4 cup of ketchup
1/4 cup of brown sugar or honey with a touch of molasses
1 teaspoon of mustard
All day in crockpot serve on rice or pasta.
what do you call this? I'm making it in my CP right now I used 2 undrained cans of kidney beans and liquid mustard and used 4 slices of bacon.
ETA: this is for tomorrows dinner but I tasted it and it's yummy!!
i discovered this veggie soup out of desperation and it is so good!! 1 can each of condensed tomato soup and cream of mushroom, throw whatever veggies in and there you go. we have crackers or cornbread with it.
also i had a pound of sausage to do something with, so i browned it and added it to rice and some fried taters. dh loved it.
i want to try the taco-taters someone mentioned!!

Hi. Do you have access to a library near you? If so, try to get ... "the $7 a meal slow cooker cookbook". I know $7 a meal still goes quick ... but there's some good stuff in it. If you don't have a library, let me know and I'll post more of our favorites.
Here's one of our favorites:
Carribbean Black Beans and Rice
2 T olive oil
3 garlic cloves
1 c brown rice
1 15 oz can black beans
2 c water
1 T vinegar
1/2 teaspoon hot sauce
1/2 t salt
1/4 t pepper
sprinkle of dried cilantro or corriander
... if you happen to have tomatoes, add them or a green pepper!
Saute onion and garlic in oil. Then put everything in the crockpot and cook on low four about 7-8 hours.

Have company coming over? I have used this recipe for years to feed 15 or so for about $12. I get the canned stuff on sale, usually $.50 each and buy meat in bulk and freeze. You can use 1-3 cans of each, but if you use 3 of one, use 3 for all! 1 can each ingredient for 4 qt...it WILL take a 6qt crockpot for 3 cans and it will be FULL!
1/2-1lb hamburger meat cooked and drained (about $3.00)
1pkg taco seasoning mix (no matter how many cans you use) (abt .69)
(This is the 1-3 can part...remember if you use 2 cans for 1 ingredient use 2 cans for all!)
1-3 cans canned chili (2-$1.20)
1-3 cans chili beans, drained (2-.69)
1-3 cans whole corn, drained (or equiv frozen) (2-$.50)
1-3 cans tomatoes (drained if you like stew and not if you like soup) (2-$.69)
1-3 cans black olives (2-.89)
Put it all in crockpot on low all day.
Broth is a great way to make a cheap meal have great flavor so I like to have a good cheap broth ready too. I save all my veggie ends, pieces, peels, leftovers, etc... in a gallon bag in the freezer. Just be ware of strong tasting veggies like broccoli and use them sparingly. When you have enough you can throw it in the crock pot fill it with water and some herbs if you want and it simmer all day. Then strain out the solids and there you go pretty much free broth. I am vegetarian, but you could also put in some meat odds and ends that are left over or even bones too.

hey - i am on the same boat as you - here is a super cheap easy and convenient meal - place 4 frozen or thawed chicken breasts and a can of salsa (the one with corn and black beans) on a crock pot - let it cook for 8 hours it will make about 5 meals for two - at least ! :)
i just posted a similar recipe :) this is a really good and cheap meal - what i actually do is that i buy a can of salsa that already has corn and beans so i just throw in the chicken and the salsa and run out the door to go to work :)
