The children can also help you to make this meal as it is very easy to prepare. Especially if your on a budget. I will be trying this.


Cheeseburger pie

Ingredients
1 lb. ground beef
1 cup chopped onions
1 1/2 cups low-fat milk
3 eggs
3/4 cup baking mix
1/4 tsp. salt
1/4 tsp. pepper
2 large tomatoes
1 cup shredded cheddar cheese

Directions
Pre-heat oven to 400 degrees F.
Grease a large casserole dish.
Brown beef and onion in non-stick skillet and drain.
Spread beef into casserole dish.
Beat milk, eggs, baking mix, salt and pepper for 90 seconds with hand mixer.
Pour the ingredients into the dish on top of the beat.
Bake for 25-30 minutes.
Top with chopped tomatoes and cheese.
Bake an additional 5 minutes

Wow this sounds great! What exactly is the baking mix? any kind of flour? WE are gluten free so that 's why Im curious

I'm guessing baking mix is biscuit mix? Or self-rising flour. Something along those lines. I bet you could use your favorite GF biscuit mix (I like the Bob's Red Mill GF biscuit mix - makes great pancakes also!!!) in place of it.

Seems to me that GF flours take longer to cook than wheat flours, though, so keep that in mind. I usually have to cook for a bit longer at a slightly lower temperature to get GF baked goods to come out right, especially waffles. Seems like they take 3 times as long!

My mom used to make this recipe when I was young and it was a family fave.

I make something similar but its called tamale pie around here. I brown the ground beef/onion and tomato and a can of corn (DH like rotel if you like a little spicy). Mix up a pkg of cornbread and pour into a oiled casserole and dump the meat mixture on top (the dough will rise thru it) and top with shredded cheese, mexican blend or monterrey jack are nice. Sicne the meat is cooked its pretty much just letting the cornbread cook and cheese melt.
