I don’t see July’s thread started yet, so I thought I would start one. I’m “due” with #2 on Sunday, but we all know that doesn’t mean anything. Either way, whenever she arrives I’m NOT interested in cooking (or even really eating at the moment) the last days before she comes, and I won’t be able to do as much the first days after she arrives, so this month is really simple, repetitive, and kind of dull (Kind of like last month for us too). Not a lot of indoor cooking and most things can be made in 15-20 minutes, which means if we are having a rough day it doesn’t need to be started until after DH comes home (and it is all simple enough that he can figure out how to make it himself, or be given a few instructions and be just fine).

My church actually does 1-2 weeks of meal ministry after a new baby arrives, which is heavenly! But because I don’t know when she is coming, and if it will be 1 or 2 weeks (it is vacation time after all), I planned food anyway. We can always freeze stuff, or use it differently so we don’t waste ingredients. (And yes, unfortunately this month has a lot more convenience/not so healthy foods in it then we normally eat, but I’m cutting myself some slack and just getting prepared to let some things slide as I get used to being a mother of an almost 2 y/o and an infant.)

I'm not all the way through yet, I'm trying to hold off the end of the month until I figure out what I can harvest from my garden.

That only leaves me 4 more days, so I'll edit when I figure those out.

This is the first time I've actually written out a meal plan for the whole month! I normally only do it by week...hopefully this will make things easier.

1.Falafel with all the fixings on a pita, and tabouli AND chicken stir fry for DP because he was tired of eating falafel!
2.Went to my parents house: Hamburgers, spinach pie and French fries
3.Hummus sandwiches and veggies
4.BBQ: Marinated chicken, grilled portabellas, grilled zucchini, pesto pasta salad with sun dried tomatoes, bruschetta and fresh bread, and fresh fruit.
5.BBQ: Marinated chicken speidies, hamburgers, corn on the cob, salt potatoes, a couple of pasta salads, potato salad, and fresh fruit.
6.Tuna melts and corn on the cob
7.Guacamole, tortilla chips and black bean, onion, garlic, jalapeño and tomato quesadillas
8.Stove top garlic pizza with arugula salad topping
9.Peanut lime noodles and avocado, cucumber, thai basil and carrot spring rolls
10.Graduation Party
11.Chicken sausage, kale and polenta
12.Grilled steak with an orzo salad and fresh veggies
13.Use steak to make fajitas, sandwiches or salad with veggie
14.Pulled pork sandwiches, coleslaw, baked beans and fresh veggie
16.Homemade calzones with spinach, tomato, garlic, ricotta and mozzarella
17.Picnic dinner @ concert: Veggies, fruit, cheese, baguette, white bean spread, and a fun dessert
18.Dinner at the in-laws
19.Grilled portabella mushroom burgers, green beans with lemon vinaigrette, green salad
20.Summer chicken salad with fresh herbs and peas on homemade focaccia bread, fresh veggie
21.Salad with apples, gorgonzola, pecans and raspberry vinaigrette, might add some leftover chicken

25.BBQ: Whatever meat is on sale to grill, steamed mussels or clams, grilled veggie skewers, raw veggie tray, fresh fruit, cheese platter with bread, crackers, etc. , tortellini pasta salad, deviled eggs, and potato salad
27.Chicken or tofu stir fry with rice
28.Beef tacos with lettuce, tomatoes, olives, onion, cheese, and avocado, spicy rice and beans and cold cucumber salad
29.Taco salad with leftover meat and fixings
30.Homemade cheese pizza and green salad
31.Picnic dinner @ concert: tomato, basil and fresh mozzarella sandwiches, olives, baguette, and special dessert

We're attempting to go the entire month without eating out, so I need to plan our meals for the week so I don't end up calling DH and asking him to pick something up on his way home from work. We're trying to save money, so I'm trying to keep things simple...

9 - Black bean soup, baked sweet potatoes, and homemade bread
10 - Homemade cheese pizza and salad
11 - Pasta, salad, and homemade garlic bread
12 - Tacos and fruit salad
13 - Lentil soup and bread
14 - Chicken, roasted red potatoes, green beans
15 - Taco salad w/ fruit
16 - Homemade cheese pizza and salad

I'd love to plan a whole month. It's just so daunting. Anyone wanna help me out? I was a part of a produce coop, but not anymore. So, just getting produce from costco, kroger, as much organic as possible. I get meat from a local farm, but this month is tight since we just went on a vacation and spent more money than we really had Any ideas for meals? My son and I are gluten/grain free, and my son is dairy free. DH eats whatever. My son will eat anything unless it's green. ugh. still battling that. But if I hide zucchini, broccoli, carrots etc in stuff, he eats it. currently I have 2 lbs ground beef, 3 lb ribeye (would like to not just grill it, but use it in a recipe to stretch out the meal), 3 almost 4 lbs wild salmon, a few cans of tuna, a few veg, but I need to go grocery shopping, so that's what I'll get mostly while I'm out. Trying to decide if I am going to get conventional chicken this time, or not. I think costco sells organic whole chickens, so I might just do that. I'd love some creative ways to make a meat and veg meal for dinner..I tend do do that most nights, and it can get boring. Thanks for any input! Also, we don't use cheese substitutes for son, I just don't do many dairy based recipes. I drink raw milk in my coffee, and occasionally some parmesan on a salad or in a pasta dish.

steak (I would grill it personally and then use the leftovers in something else)
leftover steak (sandwiches, fajitas, salad, stir fry)
grilled salmon
leftover salmon made into cakes

I can't help with the tuna, sorry. The only way I eat it is tuna melts and that doesn't work with the cheese. We're dairy free too so my meal plans follow that usually, though sometimes I do make something different for the kids.

Climbing back onto the wagon. We've been eating waaayyy too many convenience/prepared foods lately. This also means that I've been spending too much and I'm planning out of the pantry this week to make up for that. We recently butchered chickens, so we'll be eating lots of chicken this week This menu is heavier on carbs than I would like, but that's the tradeoff for eating out of the pantry I guess.

Breakfast is fruit, toast, or oatmeal.

Lunches are sandwiches, meat, cheese, fruit, nuts, leftovers, salads. I WILL eat a salad for lunch the majority of the days this week.

Sunday 7/18: Creole Shrimp, steamed asparagus
Monday 7/19: Chicken Tangine (moroccan chicken) with couscous
Tuesday 7/20: Tacos
Wednesday 7/21: chili mac, green beans
Thursday 7/22: Doro wat
Friday 7/23: Bacon Cheddar Burgers, roasted tomatoes with basil
Saturday 7/24: Spinach Lasagna, salad
Sunday 7/25: BBQ sandwiches, green beans

I'm jealous of those who can plan for a whole month. We do good to stick to a weekly plan. I don't have a clue what we'll be doing a week from now, so it's hard to plan for farther ahead than that. Here's this week's plan:

B: eggs, toast, grapes
L: mini pizzas, salad
D: stuffed bell peppers, salad, French bread

B: pancakes, strawberries
L: cheese quesadillas, tortilla chips & salsa, apple slices
D: hamburger vegetable soup, cornbread muffins

B: oatmeal or cereal, bananas
L: grilled cheese sandwiches, apple slices
D: leftover hamburger vegetable soup, cornbread muffins

B: eggs, toast, strawberries
L: leftover hamburger vegetable soup, crackers
D: crockpot Italian chicken pasta, green beans, cheesy garlic bread

B: pancakes
L: Ramen (bought it one day out of desperation & trying to get rid of it), apple slices
D: leftover Italian chicken pasta, green beans

B: cereal or oatmeal, bananas or whatever fresh fruit we have left by then
L: frozen pizza (again, trying to get rid of these before we move) & canned fruit
D: eggs, bacon, hash browns, biscuits

B: French toast, fruit (hopefully, if there's any left)
L: quesadillas, applesauce
D: chicken & dumplings, cornbread muffins
