On Sunday or Monday I cook a big pot of brown rice and put a couple kinds of beans on to soak for 24 hours. I plan my meals around that:

Asian Fried Rice
Mexican Fried Rice
Bean Tacos or Tostadas
Rice w/Tuna Sauce
Dirty Rice
Stir Fry

I call it my 'convenience' food.
