Recently gone back to work. Looking for quick premade (by me) lunches to grab from my freezer. Wraps maybe. As a teacher I only have 15-20 min to eat so it has to be something simple.

Thank you for any ideas- store bought frozen burritoes are eating my wallet.

Does soup count as simple?

If you like burritos, those are easy to make and freeze, too. Or you could make enchiladas and portion them out in single-serving sizes.

Pizza pockets/calzones, tamale pie (I bake individual ones in a muffin tin) - you could do the same with quiche or shepherd's pie. Tamales. Meatballs. Spanish rice. Grilled, sliced meat to toss on salads.

Baked goods are always kept in our freezer for lunches, too - muffins, quick breads, cookies.

Raechel, mom to 3 boys (J-14, K-11, & T-8), car seat tech/instructor, gluten-, dairy-, and soy-free cook, chicken-raising, wannabe gardener living on 5 acres.

I do this with tacos, enchiladas, lasagna (bake then freeze in individual pieces), small portions of meat to put on salads, basically any leftovers that can be frozen in small containers.

I make homemade hot pockets - if you use a french bread recipe and separate a one loaf batch into about 6 chunks, then fill it with whatever - spinach & feta, ham & cheese, pizza sauce and cheese & veggies

I got the recipe from 30 day gourmet or one of those freezer meal cookbooks.  If you buy one of the 30 day gourmet books, they have a password that comes witht he book and gives you access to a gazillion recipes designed for bulk cooking, and they have awesome worksheets to make it easy!
