Ooh, ooh! I actually have meals planned, but I don't date them. We just make whatever's on the list that seems most do-able at the time. Everything is mostly seasonal, mostly organic, mostly local, and mostly veg*n

Here goes:

Sauteed chard, tomatotes, garbanzos on rice or with bread
Ethiopian soup and Teff Biscuits
Eggplant Stew
Vegan Sausage, mashed tatoes and onion gravy
Tempeh Burgers on homemade sliced bread or buns with:
Baked Onion Rings
Herbed Potato Soup in bread bowl
Potato Soup w/ Chard Dumplings
Dal Soup with pita
Baba Ganoush, salad stuffed pita, rice
Eggplant with garbanzo batter, spaghetti squash, marinara (pseudo eggplant parmigiana)
Savory walnut-green bean mixture, either bread, biscuits, or rice (probably will eat several times at it is a fav and we have lotsa green beans)
Quesadillas w/ rice and beans, salsa (also a repeater)
BBQ tempeh pizza w/ squash and eggplant mixture yum (probably several variations of this)
Mashedy tatoes, gravy, corn, falafel (will make a big batch o falafel to fill in on protein for other meals, too)
Spaghetti squash with butter, walnut gravy, or marinara sauce
Stuffed butternut squash then recycled into:
Butternut squash soup
Spicy grilled tempeh, squash, rice
Scrambled tofu and toast
Black bean and pumpkin soup
Black bean burgers
Bow-tie pasta with feta and cubed squash (pumpkin, winter, or butternut)
salad, salad, salad every meal (our CSA had a bumper crop of late greens!)

This is our super-frugal meal list using up our pre-paid CSA and winter storage food; we will probably only have to buy cheese and maybe eggs if we want more easy/quick snacks and breakfast dinners. All other ingredients we have "in stock".

We eat lots of leftovers, so I don't feel the need to plan a full-on cooked from scratch meal for every night. I just make really big batches and then freeze, recycle, or eat the next day.

We make our own no-knead bread and use that for buns, pita, pizza, and sandwich slices (thank you Five Minute Artisan Bread!)---we got a 50# bag o flour and just re-mix a double batch of dough when we run out!

Also on the batch cooking agenda: canning focaccia-type bell pepper spread and pickled red peppers, massive amounts of pumpkin processing for two-cup portions in the freezer, (hopefully) making some large amounts of pasta for the freezer (or dry? not sure, never dried/frozen it before as we always eat it right away), big batches of frozen "veggie hash"---lightly battered eggplant/squash/okra mix as a quick go-to for breakfasts or meal sides.

Happy and in love with my family!

I'm pleased with how well we stuck to our meal plan last month. I have only been monthly meal planning for a little over a year and this is only the second month in that time that we have successfully avoided spending extra money on quick easy dinners that we hadn't planned into the menu. I recently started a blog and I posted my monthly meal plan there. Throughout the month, as I made recipes from the meal plan I would post the recipes and link back to them on the meal plan. I think that doing that has actually helped me stay a bit more accountable for some reason. I haven't gotten all of last months recipes up yet, but I like doing it so I will work my way through putting up the rest of them. It's a lot of fun and I am planning to continue it again this month. I posted November's plan there earlier today, hopefully as I make the recipes and post them it will help me stick to our plan. It saves a lot of money to plan ahead instead of eating out.

I have never planned meals before. I have a 15 months old baby and making diner has been a headache. I recently started to follow Mothering on Twitter and when I saw that the Nov. Meal plan was up I thought that it would be great to give it a try.

We usually eat out on Fridays and I only planned for diners and one diner per week-end. I didn't put the actual dates and I am taking into account the fact that Thanksgiving is this month:

Quiche
Chicken Pot Pie
Fajita
Stir Fry with Chicken
Chicken Curry Over Rice
Baked Fish, Green Beans, Rice
Pasta with Pesto Sauce
Meatloaf/roasted cauliflower/cooked carrots
Lentil Soup/grilled cheese sandwiches
Chicken Parmesan, Baked potato
Raviolis with meat sauce
Chicken Milanesa with Mashed Potatoes
Stuffed Cabbage
Chili
Lamb with Olives
Cream of Broccoli Soup
Pumpkin Soup
Tortilla de Papa
Brocolli Casserole

I hope I stick to it!!

I have to grocery shop twice a month to fit into our budget, so I only do half a month at a time. Here's what we've got so far this month:

Baked penne, garlic bread
Chicken nuggets, homemade fries, veg
Mac & cheese, veg
Corn chowder
Chicken & broccoli
Chef's Salad
Pork chops & wilted spinach salad
Stir fry
Enchiladas
Sloppy Joes, fries, veg
Pizza quesadillas

I'll post the second half after I figure it out...most likely at ten pm the night before I have to go grocery shopping!

Dear lord I'd love to plan a month at a time, but I'm in a weird situation right now. My mom and I just started a food co-op and will be getting our first delivery of produce/meat and eggs on Dec. 14th. It's going to be enough for 2 weeks, so I'm going to only be able to plan 2 weeks at a time, because the produce box will be different every two weeks. So until then, I've been going to the grocery store like every few days. BLAH! I hate going, but then I forget something, and I'm like, dang. we're almost out of eggs (I cannot run out of eggs, it's my staple!). Oh, and I'm gluten intolerant, my son is sensitive to dairy and gluten and I can't eat any dishes that are mainly focused around tomato products or heavy on the carbs b/c I'm pregnant and sensitive! So, for the next 6-7 days or so(plans sometimes change and we go out or at a family member's house), here's my plan:

28

Homemade chicken tenders (breaded with almond flour)

cauliflower

corn

applesauce

29

breaded homemade wild shrimp and cocktail sauce

broccoli

chebe rolls maybe?

30

Wild salmon

rice

fried zucchini

1

chicken pot pie(made with almond flour biscuits)

2

pork chops

fried potatoes

sauteed veggies

3

roast w/horseradish

mashed potatoes

green beans

4

leftovers

We'll have leftovers for lunch or turkey/ham sandwiches or rollups, avocado, fruit, salads etc.

breakfast is usually eggs/yogurt/fruit

Not sure what I'll be doing from the 4th on..It will depend on what meat I end up getting on Friday from my farmer.
