I am planning on preparing and freezing 50lbs of potatoes this week and want all the tips and recipes that work well for you. This is my list of what I plan on preparing.

What kind of potatos are you getting? If they are long keeping varieties I would just put them in a cool part of you house. I have potatos from October that still are doing fine,
As a spouse to some one who worked for years for the world's largest potato company. They use lots of stuff in them to make them not turn black and have access to different freezers that people have at home. I guess I wouldn't recommed it.
