As it turned out, I wasn't in the mood to eat the same thing for two meals in a row after all, so I made chicken teriyaki noodles for dinner instead.
Trying my hand at grilled pizza with sausage and veggie kabobs tonight, then repurposing the grill for a bunch of split chicken breasts and potatoes for later in the week. Planning on Greek-type pasta salad with grilled chicken, leftover grilled veggie/potato hash with eggs, and an overnight crock-pot chilli. Summer cooking strategies are in full swing!

Grilled pizza is the best.
We're having severe thunderstorms here tonight, so I wanted comfort food. I made a quick version of coq au vin, over egg noodles.
Sauteed chicken, baked spuds, carrots, corn, salad and biscuits. On Mondays I have my niece & nephews along with my kids so we have whatever I can cook in vast quantities. It's like a horde of locusts sweeping through.
Actually, my grilled pizza totally flopped. I screwed up the dough when putting it on the grill and it was a total dinner disaster. I'd love to give it another try, though.
Tonight I grilled up some sliced potatoes in pouches and chicken breasts stuffed with feta and kale. Served with Mom's Best cocoa crispies on the side for DD

We are Having some Fall like weather This week interestly enough...I made a crockpot Full of Chicken Chili Monday..We dont waste so we will finish it Off tonight with gluten Free biscuits..Tis Our 3rd Night but the 6 year old must like it cause she is still gobbling it up and not complaining of the monotomy...lol
Tonight I'm going to fix a beef stir fry with veggies, a salad, and jello with fruit in it for dessert.

We were out pretty late (in toddler land, anyhow) picking strawberries, so we picked up Panda Express on the way home.
Today we had sweet potato gnocchi in sage butter (from the frozen food aisle at Trader Joe's) and sautéed asparagus. I had a smoothie made from frozen raspberries, frozen pineapple chunks, frozen kale and some cold tea for a liquid. But then it just tasted kind of watery, so I added some raspberry preserves, and it was pretty good. But I just have a regular blender, so it comes out looking almost like a marinara sauce with big threads of kale. I like chunkies instead of smoothies, I guess.

Yesterday we did burgers, potato salad, green salad and pickles. Tonight I'm making bacon and whiskey chili - it's a little on the cool side here.

It's disgustingly humid here today. I was planning on making shepherd's pie, but I couldn't stand the thought of turning the oven on in the end, so I made teriyaki chicken noodle bowls, with scallions and broccoli instead.

Last night we scrounged a Trader Joe's dinner - dumplings, tater tots and salad with garlic dressing. Tonight DD1 is making pasta with sauce while the rest of us take our new puppy to puppy kindergarten!
So far, I think the rest of the week will include, in no particular order:
* Pizza bread with various toppings
* Clam spaghetti (with garlic sauteed in olive oil, canned clams, lemon juice)
* Spicy tuna guacamole rice bowls from Budget Bytes - sub salmon for the tuna
* Rice bowls with vegetables and homemade seitan - edamame for the seitan refusers
Cheeseburgers with roasted zucchini/red pepper/red onion and corn on the cob.
Half home made pizza here, though a little different than our standard fare - barbecue chicken with caramelized onion. Bottled barbecue sauce (pawned off on me from my MIL, who purged her cabinets in favor of healthy food...) and vacuum-packed chicken (a test run of using the camping food to make sure it's edible - it is, though would be much better mixed into a pasta sauce or soup, which is how we'll eat it camping anyway). Next time, I'll use proper chicken, probably hickory smoked first, and home made barbecue sauce. Add a little sprinkling of soy mozzarella and we'll really be in business. :-)
