Business travel for me tonight, so I ate out on the road. Great local spot to the city I'm in, with handmade pasta and a great antipasto platter. Glad to be able to expense it though!!

We ended up having nachos for dinner. I made my little guy a taco salad and he gobbled it up.

I made ravioli. Kids and I just ate it with butter and mixed veggies(cauliflower, broccoli, carrots) I made marinara for DHs.

today we had almost Thank's giving day dinner;-) We made the whole turkey, mushed potatoes, green pees and fresh tomatoes/cucumbers salad;-)

Didn't have many eating-ready leftovers for leftover night tonight, so I repurposed. Rendered ham fat from Monday to base a corn and potato chowder using leftover corn on the cob and mashed potatoes. I also blended up Tuesday's chick peas and rice with tomatoes, added some breadcrumb and egg and fried it into patties. DD hated it. I think DBF will also not be a fan. I thought it was good, though Served the soup garnished with a little smoked herring fillet and that patties with leftover green beans. A good meal overall, but not the easy leftover night I had envisioned. And now we have leftovers of the leftovers. I HATE that!

I made hamburgers with lettuce tomato and avocado with baked fries and corn. No bake cookies for dessert. It was really good!

Yes!!

Thurs. we had tom yum soup with rice and Fri. half-homemade pizza (dough by Trader Joe's). Tonight is a party so we'll probably eat there. Tomorrow is the last night before school resumes - probably tacos. Mon. and Tues. are kids' choice because school is starting - I already know that one wants homemade sushi, so I will make that with canned salmon, cucumber and probably avocado.

I'm making beef stroganoff and peas tonight. I'm cheating and using canned cream of mushroom soup. I usually do not use any canned foods and make my own condensed soups, soak my own beans etc.

Leftover rotisserie chicken quesadillas with guacamole, salsa, and ideally some other veggie although I'm not sure we have anything. DH is out of town, so just we're keeping things low key for just me and my DD this week.

Sunday night was spaghetti with roasted tomato sauce. Re-purposed leftover sauce into pizza on Monday with roasted red peppers and a green salad. Tonight is curry with broccoli and tofu.
