Finally making my BLTs tonight before all my tomatoes go bad. I already had to throw some out and u had to put the rest in the fridge bc the fruit flies were everywhere. Cottage cheese and pineapple on the side.

Oh and I also made chocolate chip cookies. I used whole wheat white flour. I've never done this before, I usually use unbleached flour when making cookies but they turned out good!

Food Truck Friday! Horribly bad for us, but delish. Chicken and waffles and chicken and fries. I don't usually eat chicken, but these are so spicy and yummy!

Sno-cone truck for dessert. DH and I had an 'adult' - pina colada spiked with rum.

Using up leftovers day here. Turned corn on the cob and carnitas into a tortilla soup for lunch, and used up a package of fake crab and yesterday's mango salsa in a "ceviche." Tonight I will hopefully salvage a package of sausages (if they're not bad smelling already...it's their last day today) with either kale or onions and peppers (or both) and leftover rice. Bam. Clean fridge.

Love leftovers day - it's like a personal mystery box challenge.

I've got half a jar of marinara sauce in the fridge, so I doctored/stretched it with ground Italian sausage, a bit of white wine and a little water. Serving over spaghetti.

I found a recipe online for coconut lime chicken and have made it twice in 2 weeks. Last night we had guests so I served it with rice, salad and broccoli.

Very lazy here and the fridge is bare so got takeout. Stromboli, salad, and a glass of red. That's pretty much my perfect Sunday dinner.

DH made pizza from Trader Joe's dough. Pretty good. Tomorrow chickpea and potato curry with rice.

Today I also managed to get a pound of pasta cooked up and a quart of spaghetti sauce made for DD's lunches/after-school meals. The sauce was 2 cans of diced tomatoes (blended until smooth) cooked up with a halved, peeled onion and some chopped garlic plus a pat of butter, salt and pepper. Simple, but good.

Ragana, do you mean that you just halve the onion but don't dice it up or anything? Do you remove it after cooking the sauce? That might be a good solution for us, since my DD hates bits of onion in the sauce. Also, I love swirling butter into my tomato sauce at the end!

We went to my dad's teamster day and he grilled steaks. My Gma brought potato salad ( she makes it the best!) and my aunt brought a Greek and an another kind of salad. It was delicious. Better off i didn't have to cook
Tonight is cheese, chicken, veggie and rice casserole. I have a rotisserie to use up. I made the rice two days ago too thinking I was making it yesterday but we went to my dad's last minute.

Yes, simmer the halved onion in the sauce. Usually, we then take it out, but this time I left some in and blended the sauce again. This is a method we learned from an Italian-American friend. It's so good!

Later this afternoon we have an appointment, so I'll stick a chicken in the crockpot. Pescatarian DD will have leftover vegetable curry from yesterday. I'm itching to go to the Korean store today and make something Korean tomorrow... Otherwise vegetable soup with a can of tomato juice that needs to be used up.

I have absolutely no idea what to make for dinner tonight... I do have a couple of pounds of potatoes I need to use up, so I may do a potato soup. Fall is here, so a nice homey soup is probably just the ticket.

Yum! Why don't I ever think of this stuff? We eat a lot of chili- Not my favorite, especially the leftovers. This sounds like a yummy way to change it up!

It was WAY better in tamale pie form! My DD even ate some. (Well....the cornbread part, anyway, but I think it's a success if she'll come near the main dish.) I cheated and used a Jiffy corn muffin mix, so it was super easy, too.

I'm a liar. I ended up making rice with tofu and peanut sauce. Still have the vegetable curry - maybe I'll have that for lunch tomorrow. Chicken has to go in the crockpot tomorrow! Haven't been to the Korean store yet, but itching to!

Husband went through the alcohol stash and found a forgotten bottle of gin - just about half a cup left, so I decided to cook with it. I'm making lemon-gin chicken, with sauteed onions, artichokes and olives. Maybe some herbed orzo on the side, because I have a lot of it in the pantry.

Hahaha it was basically a bottle of bottom shelf ditch gin - we still have a full bottle of the good stuff for the chef! :-)

Whew! We were worried there for a minute!

Tonight is finally the chicken's day - I put a rub on it & stuck it in the slow cooker. Will have it with salad, frozen potatoes, and veg DD will have the curry left over from the other day.
