Potatoes, sausage, and green beans, all thrown together in the crock pot. Homemade bread to go with.

I have been overruled, my husband loves it.

Tonight is sausage & eggplant. Received a gift of home made garlic sage butter, so we'll have that on top!

Figured out my dinners for the week:

* Chipotle chili with pinto beans, black beans, tomatoes, and corn
* Tonight - Yakisoba noodles with carrot, onion, cabbage, and tofu
* Baked tofu nuggets
* Okonomiyaki (Japanese vegetable pancakes)
* Spaghetti with red sauce and focaccia

I am not a baker, but I'm trying to find a few simple recipes I can master. So, yesterday I made brownies, today I am making mixed berry muffins, and I hope to make focaccia later this week from this recipe: http://allrecipes.com/recipe/easiest-focaccia-recipe/

Beef stew in the crockpot. I googled "homemade Dinty Moore Beef Stew" to get a recipe that closely resembles the canned stuff- Super thick 'gravy', without a heavy tomato base. I hope it turns out!

Vegan burrito bowls. "Queso" brown rice, pinto beans, salsa, avocado, and homemade pickled jalapeños from DH's garden. He grows them spicy!

Leftover stir fry tonight. Homemade flour-less peanut better cookies.
Tomorrow I'm going to make bean enchiladas. I have leftover rice from the stir fry so I thought if throw that in too.

Penne with half home made marinara sauce, leftover from the other day. We were planning on doing a pork shoulder in the crockpot today, but it wasn't fully defrosted yet, so we'll have to do it tomorrow instead.

ramen bowls- with veggies and egg. Kids ate it without too much complaint, but I had a hard time. Think I will do it differently next time. This recipe made for mushy, overcooked noodles. yuck.

cheesy brocoli casserole. I only have half the broccoli needed, and I burnt some of the rice. Oh well, too lazy tonight to improvise or start over! I figure you can't go wrong with cream and cheese...

That's it so far. Not sure what I'll be up for tomorrow because we've had lime coleslaw and cabbage in stuff all week, and the okonomiyaki has cabbage in it, too. Luckily I'm shopping tomorrow.

Last night was leftovers as DH was out with DSD. I had the last of the soup. DS almost finished the burrito bowl mix. DD had roasted sweet potato chunks. There's something so satisfying about clearing out the fridge like that. :-)

Tonight DS will be with a friend so I think we will take DD out for a pseudo date night.

Family night. Hamburgers on whole wheat buns with all the fixings and corn. Fudge cycles for dessert. I always take the kids to the store after school on Fridays and they get to pick a treat.

That sounds like a fun routine! I bet they look forward to fridays

Well, we missed lunch today. Had a repair man come over to look at our heater, which delayed some errands, which delayed lunch. The spaghetti and homemade marinara meant for lunch will just be an early dinner for the kiddies. Husband is working late, so I don't have to worry about him, and I hate spaghetti so I will likely just scrounge in the fridge for whatever.

I always feel guilty bc my almost two year old never really gets a good lunch. He lays down between 11-12 and doesn't wake until 2-3 when it's time to go get DD from school. So he eats breakfast, a snack before nap, a snack when sister comes home and then dinner. It's hard bc he's sleeping right at lunch time and then by the time he wakes up we have to leave. I try to make the snacks healthy though. Fruits and cheese and stuff.

I'm using up the last of the crockpot pork in stirfry tonight - I've got some random bag of veggie "stir fry mix" in the freezer that we need to use up, so I'll whip up a simple brown garlic sauce to go with it, and serve over rice.

Have you ever read a parenting book by Penelope Leach? She had a great line in one that I took to heart about a couple of crackers, some cheese and fruit being a complete meal for the little guys. I don't think there's anything wrong with your snack/meal schedule! My DD is 11 and still sometimes asks for a snack lunch or dinner - just a bunch of snacks on a plate.

We harvested the last of the chard from the garden yesterday, so I'll be using to make pork hand pies - I'm going to do a huge double or triple batch and freeze the extras - they will be great for quick dinners or lunches.
