Leftover night! It's my DS 2nd bday today so I made him a really cool cake and we had family over for cake and ice cream. He was so excited and absolutely adorable.

Happy b-day to your DS!

Tonight I am wimping out and ordering pad thai - daughters' choice. It's been pretty busy around here & DH and I both have stuff to go to tonight.

Otherwise, I have two bags of potatoes to use up, and I forgot to roast the cauliflower the other day, so for the rest of this week I am thinking:
* Potato-bean soup or roasted potato wedges and seitan chorizo or, if I get really ambitious, homemade gnocci (anyone made those before?)
* Roasted cauliflower and ??? maybe chili. I have a pretty large tupperware of leftover pinto beans I could make into chili.

You could always freeze the beans too. I make a big batch and then freeze them in quart size bags.

Dd has been throwing up every hour for the last 9 hours!! She's not dehydrated so I'm not sure there is much that can be done. Anyhow I don't know what to do for dinner bc I'm so exhausted. I've been letting my youngest eat crackers and watch tv all day bc I'm trying to keep up on laundry and cleaning up after dd. It's just one of those great days being a mommy

Ohhhhh. So sorry! It would be very hard to make a meal after dealing with puke all day.

We had tortellini with pesto and a spinach salad. First meal I've made for a loooong time.

Thanks! Yea I didn't feel much hungry lol.

I ended up baking some alexia waffle fries for DS. He ate those and applesauce. He snacked on fruit all day so I didn't feel too bad about not having a complete dinner
Made DH taco salad again. Laundry is done and house is sanitized, so praying nobody else gets it and we can get back on track tomorrow!

Arugula salad with roasted butternut squash, honeycrisp apples, pecans, and dried cranberries with maple mustard vinaigrette. Yum!

Special dessert as report cards came today: grilled baguette with brie, pumpkin butter, and semisweet chocolate chips. Oh. My. Goodness.

I don't usually cook meat, but sometimes I do when DSD is here. Crockpot pork with apricot jam, red onion, and home grown jalapeños. Served as tacos with avacado and pickled jalapeños along with corn salad (black beans, red onion, lime juice, red pepper).

pork with mushroom sauce on crepes. I don't think I much care for pork... It's not something I usually make, and I could barely eat it. In fact, the whole family seemed put off by it. Think I'll stick with beef and chicken!

This week's plan so far:

* Crockpot potatoes with steamed broccoli
* Noodles with tofu & vegetable stirfry
* Frozen phyllo spinach spirals and roasted cauliflower

I'm going to make the crockpot baked potatoes and then put out toppings: steamed broccoli, cheese, sour cream, hot sauce. Sometimes I do Mexican style toppings: black beans, salsa, etc.

The noodles I have are these thin noodles sold in packages of "nests" - so good! I just stir-fry any veggies I have handy and either bake or fry the tofu. Our favorite sauces are peanut, Vietnamese or a Chinese dipping sauce I learned to make in college (soy sauce + rice vinegar + sesame oil + sriracha + optional chopped garlic). Making that tonight, I just decided!

Last night: chicken verde with lime basil served with spanish rice and black beans (I actually just made this up we have a bunch of tomatillos in the garden that needed to get used so I just chopped them up with onions and garlic and threw it over some chicken thighs then squeezed lime over the whole business and baked the chicken. Then as soon as it came out I threw some chopped lime basil over everything so ridiculously good - we'll definitely be doing this again!)

Today: Stuffed delicata squash with tomatoes gratin on the side
Tue: Pumpkin Penne pasta w/ a green salad and pumpkin bread
Wed: Salisbury steak (thanks Kitchensqueen for the recipe!) with mashed potatoes, corn and a green salad
Thurs: We'll be out late that night so probably we'll get zucchini fajitas at our favorite Mexi restaurant
Fri: Stir Fry with Spicy garlic eggplant on the side

I made a crockpot roast, potatoes and carrots.
Tomorrow I'm making cheesy potatoes, and pheasant. My hubby went hunting two weekends ago
and brought back 11 pheasant breasts already cleaned and processed. The only way I have ever would made it is in the crockpot with potatoes and carrots but since I just did that with a roast I didn't want to make it this way. I'm going to bake some I guess?! Had anyone ever did this with pheasant? Any tips?

Both sound good! I think I'm going to crockpot potatoes for tomorrow.

Pheasant!? I am seriously jealous. My absolute favorite way to eat pheasant is apple wood smoked. I wrote a post about it awhile back when we did it for Thanksgiving, if you're looking for ideas.

Tonight it's chilly and we're trying to eat through pantry goods and freezer stuff before we move, so I made a proper perloo. Used up some rice that's been in pantry forever, as well as andouille sausage, the last of the shrimp and some chicken from the freezer. Score.

If I wanted to baked it though do I just do it like chicken?? I don't want to dry it out. That recipe sounds very good! It won't be something I could do tomorrow though lol

Too bad you can't try it - it's so addicting. :-) Two of my favorite tricks for making sure meat doesn't dry out are putting on some kind of a glaze, like honey mustard (with a pinch of cayenne mixed in is especially good!) or braising it. A little white wine, or stock if you don't go in for alcohol, would both be good.
