Ok ladies I just want to say the chicken, green bean, and potatoes was the best dinner I've had in a long time. The veggies and potatoes were the best part so for those who don't eat meat, it's try it with just the green beans and potatoes. So good and easy.

Totally want to try this and have been thinking about it since you posted! We're not buying meat and cooking it at home right now (are eating it out), so I may just do the veggie version.

We sometimes roast a big pan of root veggies plus brussel sprouts, whole garlic cloves, and mushrooms. We eat big bowls of that for dinner. It's a warm, easy, and yummy fall/winter veggie meal.

We haven't done that in a while, but we used to also do the roasted potatoes/sweet potatoes and root vegetables with some garlic cloves and herbs (and, in meat-eating times, sausage) - yum! The recipe mentioned above had a stick of melted butter in it, which I heartily endorse

Once my sister and I were talking about how good my grandma's cauliflower was, and then we remembered that she basically boiled a head of cauliflower and melted a stick of butter over it.

We made a large vat of potato soup tonight. I had made homemade broth overnight in the crock pot with the potatoes simmering all night. A bit of blender time and its all good.

OK, made nearly everything on my list this week, except I didn't make the seitan chorizo or the peanut soup. Tomorrow is a long day, so DH will probably make dinner. I also did a Costco run, so there are plenty of staples and snacks around. Even some vegetables left over!

Hopefully pot roast tonight. Assuming the grocery shopping gets done really quickly. Plan for the week is pot roast with Brussels sprouts, kale and white bean pasta, leftover roast with gravy over egg noodles, leftovers soup, and salmon patties with spinach salad.

Yesterday was pizza night. My daughter goes to a church activity on Saturday nights and they have pizza so we usually order pizza at home too it's fun!
Tonight was just salad. Hubby had a bad lunch so he requested a light dinner.
I have like four dinners for the week I can make;
Buffalo chicken sandwiches
Chicken stirfry
Turkey sausage Jambalaya ( just a quick box dinner)
Italian sausage marinara

Made jumbalaya tonight. Nothing fancy, it was a boxed rice mix and I added turkey smoked sausage. Sometimes you just need to cool from a box lol

First time I've made the meatloaf without a recipe. I know, it's considered an 'easy' thing, but this is a big step for me! I'm finally getting comfortable in the kitchen, and experienced enough to wing it sometimes.

That's awesome - it's so liberating to be able to step outside of a recipe. Time saver too!

Came home to another awesome crockpot dinner made by husband - a dill acquavit pork roast with potatoes, carrots and onion. Seriously amazing.

After last night's big dinner and seeing as how a few of us are sick here, I decided to switch it up and make a simple Mexican-flavored soup for dinner - veggie broth, tomatoes, black beans, mixed frozen vegetables & garlic/onion/smoked paprika/chili powder/hot sauce.
