Night three of using up stuff in the fridge. I still need to go shopping for a few things today - ugh. The plans for the rest of the week are
* Black bean burritos - have lots of tortillas to use up
* Crustless quiche - have lots of eggs to use up
* Sauerkraut soup with potatoes

Frozen vegetable lasagna tonight. I know real healthy but this is what it will be until I have baby and a couple weeks after easy and convient.

Kitchensqueen, here's how I'm planning to make it - this is to-taste; I don't have a specific recipe.

Saute onion and some shredded carrot, add sauerkraut, saute a little more. Maybe toss in a little brown sugar to carmelize the sauerkraut and take the sourness down a notch. Ideally I would saute in bacon grease, but we're mostly vegetarian for the time being, so at some point I'll just add a little smoked paprika to the soup for a little depth of flavor. Then mix with veg stock, salt and pepper, a bay leaf, and cubed, cooked potatoes. Cook until done. Serve with sour cream.

I'm totally doing it when I can remember to make or buy sauerkraut!

Fever finally subsided today, but a quick homemade sauce and spaghetti with canned green beans was all I could manage. Now I'm way behind on meals for the week and will have to scurry to make sure stuff doesn't go bad.

newmamalizzy - Glad you're on the mend! Is anyone not sick right now? I have a cold and DD1 is down with a virus or mild flu.

Big cooking day for me.. Yesterday I made a big pot of homemade chicken bone (and vegetable) broth so today I'm making a chicken pot pie to go in the freezer, then I'm trying out a new recipe for chicken/broccoli/quinoa casserole, which I'm making two of so that one of then can go in the freezer. then my freezer will be COMPLETELY full of meals.. After today I'll have about three weeks worth of meals frozen which will be so wonderful once Titus finally decides to come out!

I'm "hanging out" with @apeydef here on baby watch haha... I'm praying he comes before Christmas! I want to meet my baby boy!!!

Last night we visited Santa and had dinner in the square at a local pub. Little Man had grilled cheese and fries, husband had a burger and fries and I got fish and chips. It was so good! We're so lucky to live where we do.

Today our big meal was lunch since husband is working tonight - he made a ham, with greens beans and croissants.

I'm excited to have ham leftovers - tomorrow I'm going to make a white bean and ham soup with rosemary with the ham bone, then I'll use the last of the trimmings on Sunday to make scalloped potatoes with ham.

LM had parmesan noodles and cinnamon oatmeal. I ended up eating chicken nuggets at 9 pm. Food fail.

Won't be cooking much but after Christmas I have ladies from church who will be bringing me meals. I'll post all the yummy stuff. It's such a blessing.
