Thinking of Mothering standby Honey Baked Lentils for dinner tonight. Probably with rice and whatever scraps of vegetables are left. Need to clean out fridge and plan carefully for the week before vacation.
Ended up making the Honey-Baked Lentils in the crockpot - delicious! I used more garlic, fresh ginger, fresh onion. Served with homemade rice-a-roni (link), also yummy!

That's a favorite around here. We have that about once a week!

Night three of using up stuff in the fridge. I still need to go shopping for a few things today - ugh. The plans for the rest of the week are
* Black bean burritos - have lots of tortillas to use up
* Crustless quiche - have lots of eggs to use up
* Sauerkraut soup with potatoes

This sounds intriguing - what kind of broth and seasoning?

Husband made pasta with an Italian sausage/tomato sauce.

Kitchensqueen, here's how I'm planning to make it - this is to-taste; I don't have a specific recipe.

Saute onion and some shredded carrot, add sauerkraut, saute a little more. Maybe toss in a little brown sugar to carmelize the sauerkraut and take the sourness down a notch. Ideally I would saute in bacon grease, but we're mostly vegetarian for the time being, so at some point I'll just add a little smoked paprika to the soup for a little depth of flavor. Then mix with veg stock, salt and pepper, a bay leaf, and cubed, cooked potatoes. Cook until done. Serve with sour cream.

I'm totally doing it when I can remember to make or buy sauerkraut!

Fever finally subsided today, but a quick homemade sauce and spaghetti with canned green beans was all I could manage. Now I'm way behind on meals for the week and will have to scurry to make sure stuff doesn't go bad.

It was good!

newmamalizzy - Glad you're on the mend! Is anyone not sick right now? I have a cold and DD1 is down with a virus or mild flu.

Big cooking day for me.. Yesterday I made a big pot of homemade chicken bone (and vegetable) broth so today I'm making a chicken pot pie to go in the freezer, then I'm trying out a new recipe for chicken/broccoli/quinoa casserole, which I'm making two of so that one of then can go in the freezer. then my freezer will be COMPLETELY full of meals.. After today I'll have about three weeks worth of meals frozen which will be so wonderful once Titus finally decides to come out!

I'm "hanging out" with @apeydef here on baby watch haha... I'm praying he comes before Christmas! I want to meet my baby boy!!!

Last night we visited Santa and had dinner in the square at a local pub. Little Man had grilled cheese and fries, husband had a burger and fries and I got fish and chips. It was so good! We're so lucky to live where we do.

Today our big meal was lunch since husband is working tonight - he made a ham, with greens beans and croissants.

I'm excited to have ham leftovers - tomorrow I'm going to make a white bean and ham soup with rosemary with the ham bone, then I'll use the last of the trimmings on Sunday to make scalloped potatoes with ham.

Crockpot scalloped potatoes and pork chops...

LM had parmesan noodles and cinnamon oatmeal. I ended up eating chicken nuggets at 9 pm. Food fail.

Aiden Nathaniel was born yesterday. 12/18 10 lbs 6 oz 23 inches! (Yes you are reading that correctly)
Won't be cooking much but after Christmas I have ladies from church who will be bringing me meals. I'll post all the yummy stuff. It's such a blessing.

Thanks everyone! I just sent DH with a list to the grocery store. We shall see how it goes. It was a big list too bc Thursday was payday/shopping day and I was having the baby.

Good luck - I have such a hard time letting my husband do it; I'm such a control freak with the shopping!

My dinner plans went a little amiss this weekend. There wasn't as much ham left as I thought, so I had to scrap the scalloped potatoes with ham. But it worked out last night anyway - after husband got off work we all spent some time in the square. We bought our annual Christmas ornament (a gingerbread house) at a local shop, and enjoyed the holiday atmosphere walking around, and then picked up Chinese food for takeout. We got egg rolls, wonton soup, cashew chicken and Mongolian beef. Little Man turned up his nose at the whole lot and had yogurt and plain bread (it's like his favorite meal ever - what's a mom to do!?).

So tonight I'm making the white bean soup with the ham bone and remaining ham bits. Though I was remiss at pre-cooking the beans this afternoon, so it'll be a late meal for me... LM will no doubt request yogurt and plain bread and husband is working.

No idea what husband is cooking, but I am SO HUNGRY so I hope it's good!

Non-chicken chicken noodle soup. Haha. Cheddar and rosemary biscuits.

Christmas dinner for us will be rotisserie-style turkey breast in the crockpot, applewood-smoked turkey legs and thighs on the grill, Norwegian meatballs, mashed potatoes, ligonberries and green beans. With glogg for husband and I and juice for Little Man. And since LM probably won't eat any of that, I'll probably make his favorite - parmesan noodles - for him too.
Kate&Joey's Avatar Kate&Joey 11:42 AM Today
Maple mustard pork tenderloin, roasted potatoes, and steamed broccolini. Smoked salmon dip and pimento cheese with crackers for snacks. Rose and bubbles for the adults. Merry Christmas everyone!
