I'm making half home made pizzas tonight, to use up some pre-made crusts that expire at the end of the month. I had them in our camping stash (because pizza made on a campfire is awesome!) and then we never did use them this summer because our last camping trip got cut short.

We had homemade pizza too! I threw the dough together this morning and my kids helped make the pizzas. We also had a salad. With the extra dough I made some breakfast calzones to freeze for my husband to eat on his early shifts

I bet your pizzas turned out infinitely better than mine! The pre-made crusts I used were horrid. As it turned out, I'm glad we didn't have them on a camping trip - there's nothing more disappointing than a crappy dinner while camping and you're got no alternative!

Tonight - it's turkey central here. I'm going to eat up the last of the turkey noodle soup, which is just as well because I'm getting a scratchy throat... I'll try to convince LM to eat it, but he'll probably end up having oatmeal with cinnamon, a slice of cheese and an applesauce cup. He's already had his yogurt and parmesan noodles for today!

Last night was a ham with cloves and pineapple, green beans and mashed potatoes on the side. Black beans and rice with cole slaw tonight.

Hi ladies! It's been A lot of pizza, takeout and easy box dinners around here. My meal train started yesterday though so it will be nice to have home cooked meals. Yesterday my best friend brought me Italian sausage and tortellini soup with salad. It was really good. It has spinach, and celery and onion in it too. Very flavor-able. She also brought stuffed shells to freeze for another time. So blessed. I have someone coming every other day all through next week. It worked out perfect bc hubby went back to work today. Today we will probably have leftover soup and salad.

That's so awesome that you have such a community of friends!

Last night for New Year's Eve we had Norwegian meatballs with dill sauce, mashed potatoes and ligonberries.

Today I'm making bacon and whiskey chili.

@apeydef I never got to congratulate you on having your baby!!! Congrats mama and I think KFC was an awesome idea. Hey pretty much anything is better than stressing what to cook right? I hope to have a meal train when we have our little guy. It's in the works. Just 3 more weeks!!

No idea what we're going to do for dinner tonight yet. We're running a bit low on protein in the freezer so options are a bit limited. Maybe a "shepherd's pie" with the last package of ground pork I've got on hand?

Leftover dessert for Christmas dinner as well.
Back from a wonderful vacation! Xmas eve dinner was simple - soup and my MIL's traditional cinnamon rolls. For Xmas dinner the next day, the whole family contributed to a fantastic meal. We had grilled salmon, prime rib with horseradish sauce, chopped salad with orange vinaigrette (I consider that one a fail - I made it, trying to reproduce a restaurant dish, and the dressing didn't come out right, although the salad itself was OK), lentil salad, pasta salad (made that one, too, and it came out delicious, thankfully), mashed potatoes, homemade rolls.

Last night I got back into the cooking groove and made this soup/stew - very flavorful:

Tonight I'm contributing to dinner at a family member's house - another chopped salad, but this time I made a tried-and-true citrus/garlic vinaigrette.

I'm headed to the grocery store after husband gets home from work. There's no other time for me to go this week...

So if I can get find a good deal on a pork tenderloin, or some thick-cut pork chops I'd like to do pork in a white wine/sage sauce, with mashed potatoes on the side. But we'll see what I come up with.

Husband and I ended up eating wings and fries at 11 PM last night, after I got back from grocery shopping. Kind of a dinner fail.

No idea what I'm doing tonight... maybe just simple pan roasted chicken and mashed potatoes, or if I'm feeling more ambitious this afternoon for cooking, pasta bolognese. We'll see.

Just did the week's planning/shopping. The plan is:

Roasted chicken and veggies with spinach soup tonight
Chicken and broccoli with rice and veggies/dip Monday
Chicken soup and spinach balls Tuesday
Bean burritos with roast veggies Wednesday
Spaghetti with turkey meatballs and chopped salad Thursday
Tuna/sweet potato cakes with broccoli Friday
Homemade pizza with Caesar salad Saturday

Sounds ambitious, now that I look at it...

The in laws are here for the final holiday celebration. I'm just doing a veg lasagne with spinach and french bread. They aren't really adventurous eaters.

Well, I used the last of the celery to make home made barbecue sauce, so I didn't have any for bolognese, and I don't feel like roasted chicken. So it'll either be garlic noodles or sloppy joe squares... a very indecisive day here!

We made crockpot pulled pork today. Did a little something different this time and put a spice rub on the shoulder - brown sugar, paprika, cayenne, mustard, ground onion, ground garlic, parsley, salt and pepper. Turned out pretty good. Serve it alongside cornbread.

It's freezing here! We had zucchini and mushroom lasagna with goat cheese / lasagna roll-ups with meat sauce and parmesan tonight. Maybe baked potatoes in the oven tomorrow since it's so frosty! Or I might put the tofu in a soup instead.

More comfort food here, since these -20/-30 temps are sticking around! I'm making a big pot of chicken and dumplings tonight.

Black bean burritos with roasted veggies tonight. I fell like a cooking maniac this week, what with the stock I made yesterday and everything else. One of my better stocks, though.

Baked potatoes with all the fixings (bacon, cheese, sour cream, chives, etc), and salad.

I haven't been here in awhile- Congrats on the baby apeydef! Nice to see you're being so well taken care of postpartum, too! Yum!
