Dinner out last night was great! Husband has to work tonight, so I have no idea what I'm going to do. We have an open jar of pasta sauce in the fridge, so I'll probably just make some Italian sausage to go with that.

Ended up doing a tour of the pantry to check expiration dates and was super annoyed to have toss a few items that got poorly sorted when we moved in... but did find a few things that are expiring this weekend, of all things - macaroni and cheese and a taco kit. So guess what we're having for dinner tomorrow!?

* Totchos - tater tot nachos! Had these in Portland and have been wanting to re-create!
* Honey-baked lentils
* Pasta bake with goat cheese
* Panini
* Sesame-peanut noodles - This is one of those "magic pot" recipes where you dump everything in at once & cook it in a single pot

Also have ingredients for a vegetable-bean soup if we decide to switch something out.

Anyone have a good pot roast recipe? I ruined yet another last night, a crockpot version. Dry meat, way too oniony broth. Yuck.

Why yes I do. :-) Season the roast well with salt, pepper and thyme. Lay it on a bed of onions, carrots and potatoes. Dump a beer in it. Set the crock pot for 8 hours on low or 4 on high and walk away.

Sometimes I make a gravy before serving by taking a few cups of the liquid and reducing it a bit on the stove top with a little dijon mustard.

No idea what husband will have on the table when I get home, but I'm so hungry so I hope it's ready when I walk in the door!

Used up some stuff like lasagna noodles that was sitting around in my pasta dish tonight. Tomorrow I think will be totchos!

Well, I want to make potato soup... but i really should use up the hamburger I bought last week... So maybe meatloaf and mashed potatoes? I can't really decide. I don't really want to make meatloaf when husband won't be here to enjoy it! (he's working late tonight)

Tonight - leftovers from chickpea curry & rice and vegetable lasagna that I made yesterday, plus pizza DH brought home from work. Both kids fell sick today, and one has strep. Ugh! So, totchos get pushed to tomorrow and then back on the meal plan.
