Oh, wow! The Buffalo Chickpea Wraps were delicious and a huge hit here. I simmered chickpeas in butter and wing sauce until they soaked it up and then wrapped them in a large tortilla with rice, avocado, spinach, cucumbers, and red cabbage topped with blue cheese dressing. The best.

That sounds really good! I make buffalo chicken wraps but we eat meat. I would like it with the chickpeas but don't think I could get hubby to eat it

Yesterday a friend brought us a rotisserie, stuffing, mashed potatoes and broccoli with zucchini. Very yummy. Tonight I'm going to make salads/ wraps with the leftover rotisserie.

We aren't vegetarian strictly speaking, but DD1 is pescatarian and DD2 recently had to watch Food Inc. at school plus I'm keeping to a food budget, so we cut most of the meat out a couple of months ago. Love anything "buffalo"!!
