I've been off the grid for a little bit. Back now. Last week we ended up getting takeout once because I had a rush job and going out once. This week so far we've had spaghetti tacos and roasted potato bowls. Tonight some kind of noodle soup with tofu and frozen TJ's dumplings!

I was kind of thinking some kind of noodle soup here too, since it's supposed to be a wind chill of -30 again tonight!

But I settled on choucroute garni - sauerkraut, red potatoes, smoked sausage and pork chops. Will season with a bit of white wine, caraway and juniper berries.

Yup! I have one kid out of school again!

Ended up making vegetable noodle soup - veg broth, bag of frozen vegetables, pack of noodles (chuka soba), garlic, hoisin sauce. Very easy and yummy. I put in too many noodles and they absorbed most of the broth, but everyone liked it. Plus TJ's vegetarian Thai dumplings and pork pot stickers, both cooked pot sticker-style.

Tomorrow - freezing below-zero weather *again* so I'll probably make cheese and vegetable lasagne as an excuse to heat up the kitchen. I have lettuce to use up, too, so salad will be the side.

Ugh, this winter is just dragging! I try - really, really try - to just enjoy each season as it comes, but this one is seriously never going to end. OMG. Good call on heating up the kitchen - need to think of something baked or braised for tomorrow night to run the oven!

I think last year was objectively worse in terms of snow and cold, but somehow I have less energy this year? Definitely hard to deal with. Already looking forward to lasagne and a warm kitchen!

I'm pretty sure I have a selective memory and erase winter from my mind somewhere by mid-May! Every year ends up being a terrible surprise!

Leftovers tonight - a bit each of pot roast and corned beef, rutabaga puree, and a truly disgusting salad of kale, red cabbage and carrot. Major recipe failure there.

Didn't use up the curry sauce last week (made homemade filet-o-fish sandwiches instead), so we're having curry tofu, rice, and roasted cauliflower tonight.

Plan for the rest of the week:

* Some kind of soup, tamales from the freezer
* Goat cheese pasta or lasagna
* Black bean enchiladas

Friday will be dinner out for a party.

We've had record-breaking cold weather today, so I'm making soup (potato and leek) and homemade bread (using leftover oatmeal).

Since DH and I are empty-nesters now, we've been enjoying simple, easy but tasty meals like shakshuka (Middle Eastern eggs in tomatoes) and miso udon noodles and Welsh rarebit for supper.

That sounds good. I think I'm going to do a ham and potato soup in the crock pot later this week.
