Yum! We haven't been eating chicken lately, but I've been making chickpeas like this & using them in wraps. Hot sauce makes everything good.

Trying to actually meal plan this week. On the docket we have:

Cheeseburgers with veggies and dip
Crockpot chicken with kale mashed potatoes and carrots
Crockpot BBQ chuck roast on buns with cole slaw
Veggie chili from freezer, maybe in tamale pie form
Pork and cabbage stir fry
Tuna cauliflower casserole

Tonight we'll probably use the grill - maybe do some smoked chicken and roasted potatoes, with some baked beans on the side.

Corned beef and cabbage with potatoes tonight.

I also prepped some meals for the crockpot this week - beer-marinated chicken with oregano and garlic, barbecue country-style pork ribs and I made hoagie rolls for meatball subs in the crock pot too. And the day after we eat the the meatball subs, we'll have spaghetti to go with the leftover tomato sauce from the meatballs.

Sun. - Thai red curry soup with mock duck and rice noodles
Mon. - Chickpea wraps with wing sauce
Tue. - Pasta (probably with meatballs - I defrosted some ground beef I didn't use the other day)
Wed. - Taco salad
Thu. - Udon noodles with tofu (either soup or stir-fry)

Well, that's this week down. So far for next week, I have nachos and vegetable-goat cheese lasagna on the menu. Need to plan the rest and go shopping today. Tonight will be falafel, pita, hummus, olives, and cucumber-tomato salad.

Rainy day here so I think I'm gonna make a soup from the leftovers of a pork roast with root veggies I made earlier this week. Maybe I'll bake some cheddar cheese jalapeño corn bread muffins to go with it for some added spicy warmth. Plus the oven will heat the house nicely if I bake.

Tomorrow: Spaghetti Squash Lasagna and a green salad

Sunday: Shepherds Pie, making two, freezing one

Monday: Pumpkin Penne Pasta with a green salad

Throw together meal tonight. Half-half mix of shell pasta and frozen cauliflower w/tuna cheese sauce and buttered carrots and peas. Separate for DD, mixed for the grown ups.

Yesterday we went up to Madison for a family day to celebrate husband's birthday and had a big lunch out. By the time we got home it was late, so we scrounged leftovers - husband had the last of the meatball subs, and I whipped up a garlic sauce to go on leftover spaghetti. Little Man had parmesan noodles.

Probably leftover pasta from yesterday, since I'm halfway done digging holes in the back yard for fruit trees and after that I am going to feel like collapsing on the couch and not cooking. Likely with a beer!

For Little Man, he'll get a fruit and cheese platter, probably with parmesan noodles.

The udon-tofu bowls were good, so that's back on the menu this week. Last time I made these with soy sauce/wasabi, but this time I'm going to use the TJ's Garlic-Sriracha BBQ sauce DH bought. Also on the menu this week, crockpot chipotle-lentil-vegetable soup, taco salad, and spaghetti and meatballs.
