First beautiful day we've had in a while so we're grilling too. Burgers, zucchini, and some fruit skewers on th grill. Plus a big green salad.

We did thick pork chops on the grill, with corn on the side. And I made a home made iced chocolate layer cake for dessert!

We had so much extra fruit that I did a big fruit salad instead of a green one. The grilled fruit was insanely good though!

Today is spaghetti squash lasagna with the big green salad I was gonna do yesterday

DH away this week. Yesterday my DD and I had leftover tomato soup, a hot dog, and some fruit. Tonight was just a box of Annie's with raw broccoli (cooked one for baby) and black olives.

These are walking tacos. Basically taco salad in a single serve Fritos bag.

Yep! We did the walking tacos in Doritos bags for the kids. DH and I had regular. I swear we eat healthy most of the time!

Tonight I'm going to use up pantry and freezer stuff for some type of pasta dish. It's pretty warm, so I will probably skip lasagna in favor of something on the stovetop, hopefully with spinach from the freezer, too.

Supposed to be spicy tuna cakes, but I don't feel like it. Likely a mishmash of leftovers, maybe tuna croquettes instead of the cakes.

I found a quick way to make flatbread pizzas! I use pita bread for the dough and add tomato sauce, cheese and bake at 350 for 15 min. The texture is perfect! It took me less than a minute to put together. You should definitely try in a pinch. Also found these healthy candy bars to trick my kids into eating a healthy dessert.

I use NomNomPaleo's recipe for spicy tuna cakes, but I don't use her seasonings. I generally do a bunch of fresh lemon and basil instead. They sound weird but are surprisingly yummy and a very pleasing texture.

For the croquettes, I usually do Alton Brown's recipe, pretty much as written.

I also have a really good tuna/potato patty recipe somewhere jotted down. I'll have to search for that one.

Dinner was rotisserie chicken with salad, Mexican rice, and pinto beans. My veggie teen made herself a burrito with everything except the chicken (and a tortilla from the fridge).

Everyone seems to be enjoying good eating lately!

So, we've been having almost non-stop rain and cool temps in the Midwest lately, so I'm in comfort food mode. Tonight I plan to make up a big batch of bacon and whiskey chili. I'm going to soak extra beans and put them in the freezer for quick meals, I think. May as well since I want some for the chili anyhow.

I want to plan something special for Sunday dinner - husband will be working a day shift tomorrow so he'll be home tomorrow night.
