Leftover ground tacos here - ground turkey, refried beans and Spanish rice. Choice of crunch corn tacos or soft flour ones. With salsa of course.

Tonight we ate Chinese leftovers and I made Barbecue Baskets.

Tonight is salmon and asparagus on the grill, brown rice, broccoli and strawberries. I also need to figure out what I am going to bake for the week.

 

This week's menu:

Moroccan chicken and wild rice with chickpeas, broccoli, fruit

Fish tacos (wild cod), black beans, salad, carrots, fruit

Bbq hamburger patties, sautéed onions and mushrooms, roasted sweet potatoes and brussels sprouts, broccoli, fruit

Chicken cacciatore with peppers, mushrooms and zucchini, brown rice fusili, zucchini noodles, fruit

Seared ahi tuna steaks, rice, stir fried broccoli, onions, peppers and carrots, fruit

Waffles, sausages, eggs, fruit 

 

I have successfully cut our grocery budget down quite a bit in the last two months by simplifying my meal plan and making myself stick to it and avoiding going to the store during the week unless I absolutely have to, which is usually only for more milk and fresh produce. It's a slippery slope stopping at the store for just a couple things and walking out having spent $20+. So far so good!

Fabulous weather here so DH grilled. Flank steak and asparagus / zucchini / mushrooms / peppers / sweet potatoes. I made chimichurri sauce and a anchovy / garlic / caper sauce for the veggies. Lemon mousse for dessert.

Just me eating since Little Man is in bed and husband is at work. So I'm making sausage, white bean and kale pasta. But I have to quick cook the beans from dried, so it's taking forever...

We had a couple nights of left overs since I was sick. I made steak on the grill and au graten potatoes Thurs to welcome in spring. Today we had pork chops, Mac and cheese (gf) and applesauce. Tomorrow I have chicken and dumplings planned.

Tonight we will be having stuffed peppers without the peppers. ;-) So basically huge meatballs in a tomato gravy. We'll also have mashed potatoes. :eat

Tuna melts here for tonight.  Or grilled cheese for my kid who hates tuna. 

Scratch that- wound up with a premade deli chicken when grocery shopping ran a bit late and I went on cooking strike. But at least I have everything for the tuna melts tomorrow and I will make most of it up early in the day and just toss it together at the last minute.

MON was potato and salmon bake based on a Janssons Frestelse (Jansson's Surprise) recipe. Pretty good.

TUE Black bean tacos with flour tortillas

WED Spaghetti and meatballs, sauteed mushrooms

THU Lentil curry, rice and roasted cauliflower

FRI Not sure yet! Maybe something with eggs - I have a ton of those from Costco

MON, TUE and WED went according to plan. THU kids were at a friend's, so DH and I ate leftovers from lunch out. FRI (tonight) we had rice, black beans, roasted cauliflower and salad.

 

SAT Out at a friend's

NEXT WK starting SUN in no particular order:

* Pasta & tomato sauce, parmesan

* Tacos - flour/corn tortilla with black beans

* Lentil/bean soup

* Probably some kind of curry - either Indian or Thai

* Something with ground beef
