I didn't see a recent active thread about dinner, and since I love to cook to and eat I thought I'd start one.
Last night we had ham and scalloped potatoes (using leftover Easter ham) and tonight we had bamee noodles with barbecued pork.
Tomorrow night, I'm thinking about doing a bacon and whiskey chili since it's so rainy and cool, but I'm not sure yet. Who knows what I'll want tomorrow?
Tonight I made cube steak with country gravy, mashed potatoes, and greenbeans. I always make DSS (10) try whatever I make, and he actually ate it! (He typically will only eat pizza, buttered noodles, and McDonalds...)
We did penne with chicken and marinara sauce. I've been thinking about scalloped potatoes with ham, so I may do a pan this weekend for one of our dinners.
It's COLD here. In the 40s tonight, so I made black bean soup. It had beans (dry and soaked), onions, garlic, ham cubes, olive oil, bay leaf, cumin, can of Rotel, chicken broth, black pepper...and maybe something else I am forgetting! I served it over long grain rice. I made green beans on the side. It was really good! I was on antibiotics for 10 days, so I was unable to drink much during the holidays. I had two decent sized glasses of Chianti wine with dinner!
We're in the middle of the Midwestern snow storm (I lost count, but judging from today's shoveling, we have maybe a foot and a half on the ground) and cold snap (high of -10 predicted tomorrow, -50 windchill). School is cancelled tomorrow! I told the kids it could be restaurant night tonight, meaning I will make them what they want - DD1 is getting clam spaghetti and DD2 a hamburger. Not sure about DH and me. Probably a combo. We'll be doing pantry meals for at least the next two to three days. Getting the cars out today was pretty difficult, so we don't want to move them if we don't have to.

It is nasty outside! I'm already planning to work from home tomorrow. I made a big pan of scalloped potatoes with ham today for lunch since that was our main meal before husband went to work. But he just texted to say they're closing early at six, so we'll eat the rest of it for dinner! Good thing we don't mind eating the same thing twice.
I made spaghetti, and somehow messed it all up while trying to take care of a fussy DS. Not even fancy spaghetti, I'm talking boil some noodles and dump sauce all over it. It never reboiled after adding the noodles, and it was all glumped together. Oh well. There's always tomorrow!

Tonight was roll-your-own sushi: brown sushi rice + nori sheets + fillings: cucumber, avocado, crab & mayo, flying fish roe. Result of a long-awaited trip to the big Asian food store. Aaaaaah!
Keep meaning to rejoin this thread for some new, hopefully simpler, dinner ideas. I feel like I'm cooking ALL DAY lately!
So, tonight was a navy bean/kale/country ham soup with southern-style corn bread. It was delicious.
Tomorrow...I think we're doing split chicken breasts with tarragon, mashed carrots and rutabaga, and roasted potatoes. Argh. Just typing it out makes it seem like too much cooking

Two disasters in a row - my quinoa pasta was too old and refused to cook, my "lazy" jar of pasta sauce was way too sweet, my meatball mix smelled funny so I had to trash it. Next night I attempted too much and got all harried. My chicken smoked up the house when I seared it, oil splattered all over the floor and everything was slippery, I finally got it up to temp, started on my pan sauce and noticed pink juice on the chicken plate. Argh!

Not even sure. It's noon and I just had a cereal bar and coffee earlier. I was waiting on him to get up. When he finally did, I showered, then she was ready for a nap. And here I am. Hungry. Was planning chicken alfredo, but I have more left overs from yesterday than I planned. But he also wants to go to the gas station and get burritos....
