So hot here, but I'm not entirely complaining. We had zero spring this year. We went from 40s to 80s practically overnight... but anyway the sudden onslaught of warmth has caught us unawares, so we winged it with sandwiches tonight - choice of ham or turkey, with baked beans, pretzel chips and pickles on the side.

Fragolina - You might want to google "slow cooker freezer cooking" or "crockpot freezer cooking". I have found a lot of stuff like this:

Some of the recipes look pretty good (I don't do "cream of" soups, but you can sub for those), and I love the idea, but unfortunately, I have one non-meat eater and one non-stew eater in the family, so it doesn't work for us. Sometime I should try it anyway for DH and me!

 

Tonight we had taco salad. I tried a recipe for homemade seitan chorizo crumbles that was a keeper. Served with the usual suspects - lettuce, homemade salsa, black beans, avocado, cheese, sour cream and some lime tortilla chips.

Fragolina, for beef stew I like to throw a couple pounds of cube steak in the slow cooker with salt, pepper, rosemary, and garlic. After a few hours, I add about 15 little, red potatoes (I usually halve or quarter them) and 2 large onions (quartered). Around this time I add a cup or 2 of water. 2 hours before eating, I add 2 handfuls of baby carrots and a cup or 2 of peas.

Sometimes I don't want to be so fiddly, so just put it all in with the beef in the morning, and that's good too. :yum 

 

Dinner tonight will be leftovers.

We had delicious homemade pizza the other night. Basic thin-crust pizza with pesto, three cheeses (mozzarella, parmesan and feta), tomato, olives and ramps. I picked the ramps myself in the forest around our cottage. So yummy! 

 

Tonight I made penne pasta with Italian sausage, tomato, and more ramps. Next, I'm planning on using the last of the ramps with some nettles from my yard to make some soup.

Frangolina, I think (if I'm remembering right)- I prepped a bunch of pizza dough and sauce to freeze (my husband doesn't cook, but he can throw together a pizza); I froze Shepard's pie; I froze ground beef and ground turkey for use in sauces and/or burritos; I made breakfast burritos and froze those; froze cooked brown rice; froze lasagna; froze a batch of split pea soup and a batch of chipotle sweet potato chili. Lots of easy, tasty basics.

 

We're having dinner at a new friend's house tonight- I think I'm making some "vegan" (but I always make them with real butter and milk, so not vegan at all, just egg free for my allergic kiddo) golden vanilla cupcakes with a creamy strawberry frosting (sans powdered sugar so it's corn-free, again for the sensitive kiddo; similar to this: http://allrecipes.com/recipe/creamy-frosting/

Those are great ideas! I started with the necessities first: chocolate chip cookie dough balls for on demand cookies smile.gif There are 4 dozen freezing right now, and prepping chicken for broccoli rice and cheese casserole (no canned soups...they give me heartburn so bad it's unbelievable), fajitas and enchiladas. Next week I'll tackle lasagna and ground beef/taco meat, and maybe pizza dough the week after that. Add in a few peach cobblers and berry pies and I should be set for a little bit smile.gif

Last night husband made tequila and chipotle marinated steaks, which we had with Spanish rice and some leftover baked beans. 

 

Husband is working tonight, so I'll probably just raid the fridge for what ever leftovers need to be eaten.

Change of plans - not as many leftovers in the fridge as I thought, so I ate them up for lunch. So tonight I'm making my usual standby as of late - bean and bacon pasta. Because there is rigatoni in the fridge that I need to use up.

I'm thinking homemade pizza. I made some the other night with leftovers as toppings and while it was good, it was not at all like pizza.

After making all those freezer meals yesterday, the last thing I wanted to do was cook, so we ordered pizza. Today (right now actually), I'm making some spare ribs in the oven with a smokey dry rub to finish off on the grill, with Mac and cheese and corn on the cob. For dessert, I made a simple berry cobbler with some frozen berries I'm trying to use up.

Oops, DD1 has to have a bland diet for a while, so I am going ahead with Thai curry tonight, but in a soupier form, and will serve with the brown rice noodles. It's in the crockpot right now. Tomorrow will probably be vegetable baked ziti - a bit blander than what I had planned. Thurs. and Fri. can stay the same, I think.

Tonight I made a quick dinner just for myself since DH is working late (he loves leftovers anyway :yum). I sauteed whole grape tomatoes in olive oil and garlic until they burst, tossed with thin spaghetti and simmered for a minute, then topped with a ton of fresh basil and parmesan cheese. So good!

 

While that was cooking, I put together beef stew in the slow cooker for tomorrow...I used a cup of beer and a cup of water as the simmering liquid, so we'll see how that comes out! It's always hit or miss with cooking with beer for me.

We did a 'grab what you want' evening.  It was supposed to be chicken noodle soup, but I didn't get that far today.  Tuna sandwiches and random veggies with dip were the go to.

The beef stew was phenomenal! I'll have to remember this recipe, although I'm a little worried that part of the reason it was so great was because I used fresh ingredients. I froze a batch of ingredients to have when the baby comes, so we'll see if it's as good then as well.

Tonight is chicken salad either in sandwiches or on a bed of greens depending on preference.  I was going to make soup with the leftover chicken, but it isn't soup weather (or mood, apparently- fickle pregnancy appetite.)

And tomorrow I an totally combing back through this thread to pull up some ideas as I need to actually return to meal planning again.

Tonight was supposed to be yoga night, but I'm skipping in favor of watching the Hawks game - it's an elimination round... so we've having sandwiches, and maybe a bit of the huge batch of pasta salad I made for tomorrow's work pot luck. More than enough to share out some to us. :-)

Tonight ended up being a mess of noodles, pork, onions, peppers, zucchini, tomato and broth all cooked up together.  Not fancy, by any stretch, but ended up pretty tasty.  Tomorrow will be beef veggie soup from the freezer with Bavarian bread dumplings.
