I made a plan for the next three days:
* Pasta with jar sauce and shrimp, broccoli
* Soft tacos with black beans, avocado, salsa, etc.
* Japanese rice bowls with tofu, cucumber, avocado

KQ - 100 degrees??? I only lived in Chicago for about 16 months but the fluctuation in temperature is truly amazing. I live in Atlanta now and it's way cooler here!

Yeah, it's about 97 degrees at 9 PM! Weather is just crazy here, but I'll take the heat over the cold any day!

Last night we cheated and went to Chik-Fil-A. Nice surprise was that it was kid's night, so Little Man's meal was free when we purchased ours, plus ice cream for his dessert.

Tonight it's cooler but I need to do a bit of office work, so we're doing beef tacos from the seasoned ground meat we put in the freezer stash.

I also need to put a dry rub on a pork shoulder that's defrosted and then sear it, so it can go in the crock pot for pulled pork for tomorrow's dinner. I've got Ned Beattys and Bloody Marys on my mind...

We're getting the kids cooking this summer, so they helped come up with the menu. DH is also cooking. Here's the plan for the week:

* Pizza bread & salad
* Spaghetti tacos
* Pasta with red sauce & salad
* Rice bowls with edamame, vegetables & veggie egg rolls, Vietnamese sauce/peanut sauce
* Rice & seitan with broccoli & mushrooms

My famous confetti salad

1 diced cucumber,
1 diced bell pepper
1 diced garlic clove
3 diced tomatoes
dash of olive oil
dash of apple cider vinegar
sea salt
fresh ground pepper

chill and eat. great for those hot summer days when cooking is too much!

We were supposed to have homemade pizza and salad, too. But after a hot walk I wussed out on turning the oven on and we ended up with takeout pizza instead. Wasn't as good as mine, though

No idea what do for dinner tonight... husband is working and Little Man will probably demand (and receive) mac and cheese... It's so hot I just don't feel like cooking at all. I'll probably end up eating a bag of edamame or something.

I fell asleep after a long afternoon at the farmer's market, library, play structure, etc... so the oldest boychild made dinner. Mac & cheese, hot dogs, fresh veggie sticks with ranch for dipping. Not the healthiest meal ever, but not horrible.

Mama to Munchkin  and Chickadee ...and co-parent to 3 additional bundles of energy!

I don't know, the fact that he thought to include fresh veggie sticks is fairly impressive. :-)

I made a big batch of pasta salad for lunch/dinner eating. Husband is working tonight, so it'll be more of a graze. It's so humid we caved in and turned on the AC, so I don't feel like doing serious cooking and heating up the house again.

This is true! We just seem to fall on "mac & cheese with hot dogs" as a dinner choice more often than I'd like.

Pasta salad might work today... all the picky eaters are home, so it might also flop, but I am hot and tired enough that easy dinner is really appealing.
