I need ideas for healthy food that requires little prep/cooking/storage and can feed a lot of people.
Bonus points for suggestions that are diabetic-friendly, cheap (we're double-mortgaging it, so we'll be broke!), and easy to eat while packing.
I'm also looking for a yummy lunch idea for moving day: that can be less healthy/cheap since I want to reward my friends heartily for their help lugging my stuff around!

One of my quick go to meals is turkey roll ups. I just throw some turkey, cheese, mayo, mustard and sometimes lettuce and tomato on a tortilla and you're ready to go. You can use whole wheat tortillas or pitas if you prefer. Veggies and hummus also go great as a side with those.
