I started a thread in the vegetarian forum but thought it would be interesting to see what all Mama's do with the "dreaded" leftovers

I personally LOVE coming up with leftover ideas

Tonight is leftover rice and beans from some different meals turned into burritos

What are your fave ways to use leftovers...

Last night's leftover rice is being used for fried rice tonight.  I do this alot (not real creative, I know, but I tend do dislike the texture of rice that has been refridgerated but frying it solves that problem).

I like throwing things into burritos too!  Can never go wrong there!

And... I'm officially out of ideas/suggestions.  But I will be waiting to read all the responses from those more kitchen savvy than I!

I love using leftover meat to do a quick stirfry the next day with frozen veggies and quick noodles. Since the meat isn't raw, the stir fry is super quick.

Tonight I'm throwing leftover cooked chickpeas into some frozen curry for dinner. Not a creative way of using leftovers but better then wasting themshrug.gif

Leftovers? Never dreaded them.

They usually become lunch the next day, or return for supper the day after.

Bits and pieces of things can become part of a sauce or stir fry or stew.

I'll sprinkle the last little bits of a chunky soup or stew over salad.  Yum!

Tonight I made a cream sauce and a couple of pieces of bacon to finish off a batch off egg noodles I made Thursday. Everyone here loves creamy pasta with bacon.

I often do the stir fry thing for leftover rice.

I add leftover chicken or steak to soup.

And quiche can take quite a few "bits" if you are careful with combining flavors.

I've got a container of frozen lentils and brown rice flavored with garam masala and I have NO idea what to do with them besides soup. eyesroll.gif

Dh and I eat it with fried onion on top but the kids don't like it and I'd rather use it up as a family meal. Maybe a casserole or something???

Ideas please!!!

Indian-style empanadas?

Some sort of stuffed bread product, anyways.

I think tonight I'm going along with the burger idea but doing a loaf. An easy fall back but I'm craving comfort food
