Hi out there from Phoenix, AZ- with a high of 109 for today!! I am trying to serve mostly cold foods this summer- to avoid using the oven AND to help avoid eating hot foods while sweltering. I am struggling to find both main dish and veggie dish (other than salad) COLD recipes.... I have come across an abundance of mayonnaise based recipes which I am okay with but not every day. Please share if you know of any good suggestions!! DH is weird, e.g. he would rather eat cold chicken salad than bits of a cold rotisserie chicken, which just seems odd to me- you can put bits of delish chicken in your salad- ANYWAYS I'm rambling! Anything and everything greatly appreciated :)

Also, it's blazing here (100, not Phoenix levels ;)) and I made tuna noodle salad. You have to hard boil the eggs and cook the noodles, but it only takes 15 minutes so the stove isn't hot for long.
Any kind of pasta salad is good. Cucumber salad. Caprese salad. Bean salads. Basically, put some vinaigrette on anything, serve it cold, and call it a salad.
