I bought some ground beef from my farmer and it thawed in the car (all 40 lb!!!) so we browned it and froze it in gallon ziplocks.  Sounds fine right?

Well, when we thawed it to make taco meat, the meat was, uh, paper-y?  Taste is fine, but the texture was just off. Any suggestions?  We have two more gallon bags of this stuff, and its not cheap. I'd like to be able to salvage it somehow.

The only suggestion I can think of, since it tastes fine and it sounds like you were safe with it (browning it and freezing it) is to use it in dishes with as much flavor as possible. Maybe put it in the crock pot with lots of vegetables, for example, or when you make spaghetti and use sauce, add garlic pepper and whatever else you like. You could also ask the farmer you bought it from what he would do.
