So, for those that are doing something for Easter, what's your menu?

 

We're having a low key lunch with my in laws, and they have offered to bring a small ham. So I'm going to make an egg casserole, home made biscuits and a fruit salad to go with it. We're also combining my husband's birthday celebration with lunch, so I'm also making carrot cake, which is his annual birthday request. And we'll have half a dozen brightly colored hard boiled eggs too. :-)

Changing the menu a bit - no fruit salad, but I'm doing an antipasto platter to add in some more savory appetizers - salami, Nicoise olives, marinated mushrooms and cheese.

Sounds yummy! We're veggie, so no ham here!

 

We are doing: Hard boiled eggs and vanilla pancakes. Munchies during the day (cheese and crackers, fruit, nuts, olives). Gnocchi with sweet potato and rosemary; green beans; garlic bread; homemade ice cream.

Gnocchi sounds good, and the perfect dish for Easter. So fresh and light.

I was planning on lamb for me & my Mom, cornish hens for DH & the girls....but I spaced out on the timing and forgot to buy/defrost any of it.shy.gif. So I asked the kids to choose and it's now pinwheel steak with roasted pototoes and probably honeyed carrots. Maybe the last of the spaghetti squash.
