I've got a pot pie recipe, that we like pretty well.
1 c. sliced carrots, celery, and onion
2. c. frozen peas
4 boneless chicken breasts cooked(altough I just usually pick the bones of a chicken or use just 1 or 2 breasts)
2 1/2 c. chicken broth
2/3 c. milk
1/2 t. salt
Steam carrots and celery for 5 min. in steamer, or saucepan with a small amt. of water. Add peas and onions and continue steaming for 10-12 min. until carrots are tender.
In large saucepan melt butter over med. heat, remove from heat, then add flour, whisk until smooth. Add chicken broth and milk and continue stirring over high heat until the mixture comes to boil. Cook for a few minutes until thickened, then reduce heat to low. Cut chicken into pieces and add to salt with salt and peppper. Add veiggies and simmer for 4-5 minutes.
I just throw this in a casserole dish(9 in round) and make a homemade biscuit topping. Or you could use canned biscuits, or premade pie crusts, or homemade pie crusts. I can give you a biscuit recipe if you need, I use one from LLL cookbook.
Bake at 350 until your crusts is golden brown.
* I usually just use canned vegetables to save time
