Have you tried a new recipe lately that you've absolutely loved? Please pass it along. We can all share! :

Mine:

Muffins! (from some magazine)

1 cup crushed pineapple in its own juice
3 cups flour
2 cups sugar
1 t. baking soda
1 t. baking powder
1 t. salt
2 t. cinnamon
2 large eggs
1 egg whites
1/2 cup safflower oil (I just used vegetable oil and it was fine)
2 t. vanilla
2 cups coarsely shredded carrots
1/2 cup applesauce

Heat the oven to 350*. Drain the pineapple and reserve the juice. In a large bowl, whisk together the flour, sugar, baking soda, baking powder, salt, and cinnamon. Make a well in the center of the mixture and drop in the eggs, oil, vanilla, and reserved pineapple juice. Beat at medium speed until blended, about 1 1/2 minutes. With a spoon, stir in the crushed pineapple, shredded carrots, and applesauce. Then spoon the batter into paper bake cups set in 2 muffin tins. Bake about 22 minutes. Cool on wire rack. Serves 24.

This one is VERY yummy and super easy. I think it's from recipezaar.com.


Orange and Lentil Soup:


INGREDIENTS:

2 tablespoons butter

1 onion, diced

2/3 cup red lentils

1/2 cup orange juice

1 stalk celery, chopped

1/2 carrot, shredded

1 bay leaf

1/2 teaspoon dried thyme

ground black pepper to taste

3 cups chicken broth, divided


------------------------------------------------------------------------
DIRECTIONS:


1.In a pot over medium heat, cook onions in butter until softened. Stir in lentils, orange juice, celery, carrot, bay leaf, thyme, pepper and half the chicken broth and simmer 40 minutes, until lentils are tender.

2.Puree in a blender or food processor, or using an immersion blender. Return to the pot, stir in remaining chicken broth and heat through.

You're right.. it's very easy and very flavorful.

I made vegetarian stuffed peppers tonight. I throw some beans in a crock pot with just enough water to cover them (you may need to add extra water throughout the day) and cook them all day on low. Then I make some brown rice and have DH throw the peppers on the grill. If they are big, I cut them in half. When the rice and beans are done, I put them in a bowl and add shredded cheese and salsa to taste. Yum! It's cheap, easy, yummy, and we always have leftovers of the stuffing for tacos another night.

I just LOVE this:

Sweet Garlic Tofu

Ingredients:

4 oz (half of block) tofu - any kind
handful (1/4 cup, to taste) brown sugar
2 large cloves garlic, crushed
vegetable oil
salt, pepper, seasonings of choice.

Directions:
Place about 1/2 inch of oil in medium heated pan and fry tofu until golden brown. This is very messy because of the water content in tofu! Be careful! Once tofu is fried, pour out excess oil. Put sugar, garlic, and seasonings in with tofu and cook until well coated and sugar is just beginning to become sticky. If you cook it too long, you will begin to have carmel! And that's it - serve over rice, or noodles.

Serves: 1 large

Preparation time: 20 min

Made this dish this week and it was

Tomato and Balsamic Pasta

Start cooking 1 lb of linguine.
Cook 10-12 cloves of diced garlic in some olive oil on low heat just until starting to color, about 10 or 15 minutes.
Add 1/2 c of the pasta cooking water to the garlic.
Stir in 3/4 c chopped basil.
Add the cooked pasta and 4 c diced tomatoes.
Toss with parmesan and 4-6 T balsamic vinegar.

I started doing this recipe because my hubbys a meat and potatoes kind of man, but we went vegetarian,this may not be the healthiest depending on what you serve with it, but its not too bad. Quick and really easy though!

Chik'n Fried "Fake Steak"

i use a package of morningstar fake chik'n patties and lightly fry them with olive oil til heated through, I throw on some peppered gravy with a side of mashed potatoes and there you go!
