Made this for dinner last night and it was so yummy....
I browned some ground beef with onions, but you could just go vegetarian, too. Then pureed canned black beans - 1/2 amount in blender, other half unpureed into big pot. Added jar of salsa, some lime juice, some cumin and that was it...all done and delicious...we served it over rice or extra nutrition.
