Okay--so I bought a 10 lb bag of frozen chicken leg quarters. Thinking . . . well, I don't know what I was thinking!!

I am also dying to test out my new 6 quart crock pot.

So does anyone have a recipe or any suggestions for me??

Thanks!

Chicken and dumplings

Baked chicken w/ oregnao and feta

If you let them thaw out in a marinade, and then either bake or grill them, they will be very tasty. I make a homemade teriaki marinade that is delicious with chicken legs. I think it's my dd's favorite meal.

Go to hillbillyhousewife.com and check her chicken recipes. She has a whole section for legs and quarters.

And, if you prepare them (basically boil them) as for chicken and dumplings, you could bag and freeze some meat for other meals.

Cool! Thanks for your responses--keep 'em coming!

I actually made some awesome hot wings the other night in the crock pot, using a recipe from the manual. I adapted it to the number of wings I had, but basically the recipe calls for 8 lbs of chicken wings, rinsed in cold water, put them in the crock pot and add 1 cup apple cider vinegar, 2 T hot pepper sauce, and cover with 2 cups of bbq sauce. Cook for 3 hours on high or 6 on low. I actually substituted rice vinegar b/c it was what I had, and they cooked longer than recommended, but OMG they were GOOD!!!! I was considering trying that with the leg quarters too because the neighborhood picnic is coming up this Saturday!

Chicken Adobo! One of our favorites, and it's great with dark meat in the crockpot.

You can Google for variations, but ours is basically equal parts soy sauce, water, and apple cider vinegar, with a chopped onion, a bay leaf, whole peppercorns, and LOTS of garlic. Like, 5-6 cloves' worth. Pour over the chicken in the crockpot, and let 'em cook until you can't stand it anymore.

Enjoy!
