A friend taught me this for leftover veggies...
Cut up all veggies in bite sized cubes/pieces
Cut up cheese in bite sized cubes/pieces
Add olive oil and balsamic vinegar (2 parts to 4 parts)
Marinate in the fridge for a day...keeps for up to a week in a sealed container, although mine never lasts that long!
I use zucchini, squash, broccoli, snowpeas/pods, carrots, cauliflower, peppers, etc. (pretty much anything/everything but tomatoes) for cheese I use a dill havarti, adds a little extra kick. I use extra virgin olive oil and good quality balsamic vinegar!
