Please post your menu for 1/15--1/21 here!

Mine is a mess. I actually haven't planned because we're "flying by the seat of our pants" so to speak b/c we're waiting on money. My DH is self-employed, and well, people take forever to pay! : That makes us late paying some of our bills, and so on. Anyway, I've got to see what I can scrounge up. Typically I have a system on what meals we have on what days, but I don't think that's going to be the case this week.

M: leftover shredded bbq pork
T: leftover bean & rice burritos
W: lasagna
Th: breakfast for dinner
Fri: homemade pizza

Here's mine - though I reserve the right to switch it up at any time, lol!

S - Shepherd's Pie and broccoli bake
M - Fennel Pork Chops with herbed roasted veggies
T - White sausage with sauerkraut and brown mustard (a risk - wish me luck!)
W - Hamburger Casserole and baked sweet potatoes
Th - (Italian Chicken) Sausage-and-Corn Chowder
Fr - Leftovers
Sat - Honey-Baked Lentils

If I don't get to the store tomorrow, Thursday's meal will turn into plain old sausage with some veggie on the side.

Looking forward to reading more!

This weekend, my husband let me go to http://www.letsdish.com

I made:
  • Herb & Blue Cheese Butter Steaks
  • Old World Beef Stroganoff
  • Brown Sugar Salmon (with WILD ALASKAN)
  • Torrtelini w. Walnut Sauce
  • Mexican Barbacoa Beef

Today, we are having Brown Sugar Salmon. Tomorrow, Blue Cheese Butter Steaks.

The rest of the week will depend on what I feel like.

We eat a good deal of pasta here, too. It's cheap, fairly healthy, and it's a guarantee that my kids will eat it.

Sun. homemade mac & cheese (brought to a potluck)

I just plan the main courses, and add whatever salad/veg I have that sounds good.

Here's what we had/are having this week:

Sunday: Ate out - sushi
Monday: kielbasa, sauteed onions, sauerkraut, brown rice, pumpkin pie
Tuesday: Fried rice made with brown rice, leftover chicken, bacon, onions, cabbage, eggs
Wednesday: Beef pot roast with root vegetables
Thursday: Leftover pot roast
Friday: Chicken stir fry
Saturday: Pork roast

Sure! I love allrecipes, too, but neither of these is from that site.

The Quinotto recipe is from http://gfrecipes.com/quinoa.txt
but I'll put the ingredients and my version of the instructions below. This is the first time I'll be making this.

Quinotto

1 cup/person of grains (either quinoa, brown rice, or millet)

2.5 cups/person vegetable stock

some oil or margarine at your discretion

1 onion, minced

1 tbsp./person nutritional yeast

1 glass of wine (optional)

veggie of choice (list follows)

parsley, minced (optional)

salt-pepper as needed


Wash and toast grains. Sauté' onion in oil until golden. Add veggies and cook over low heat until they are limp.
In another pot, add stock and wine and bring to a boil. Keep stock hot over low heat.

Add grains and cook until all of the juice and oil is absorbed. When liquid is low, add a ladle of hot stock. Keep stirring and adding stock for 20 minutes (quinoa), 30 minutes (millet), 50 minutes (brown rice), until cooked. Only add stock when all of the previous liquid has been absorbed. Stir often or it will stick. Sprinkle with nutritional yeast and minced parsley.

Veggie of choice: mushrooms, asparagus tips, artichoke hearts, radicchio

The Tilapia Almondine is adapted so I'm just going to cut & paste my instructions from the word document.


Tilapia Fillets Almondine


Ingredients: 4 tilapia fillets, thawed
¼ cup sliced almonds
2 Tbsp butter
2 Tbsp lemon juice
1 tsp grated lemon zest

Directions: Melt 1 Tbsp butter in large skillet over medium heat. Place fillets in skillet, cooking about 2 to 3 minutes on each side, or until fillets flake easily when tested with a fork. Remove from skillet.

In same skillet melt remaining butter. Add sliced almonds, lemon juice, lemon zest and sauté for 1 minute. Pour sauce over fillets and serve.

THUR - Seitan Pho (slow cooker)
FRI - Bratwurst with roasted potatoes
SAT - Potatoe Leek soup w/sandwich
SUN - Lasagne
MON - Beans'n'Greens stew (slow cooker)
TUE - Chilli
