Alright, this is the third or fourth time I've made this recipe and every stinkin time the rice is crunchy! Flavor is fantastic but I've got to be doing something wrong. I'm using Mahatma brown rice. Any ideas??

And also, since I'm here...any good recipes for roasted veggies?

Perhapw your stove is a bit hot or your pan not tight enough and too much water is evaporating. I would try adding a bit more water and cooking a little longer.

Thanks...I guess I wasn't sure if crunchy meant over or under cooked. I will try that next time and see what happens.

I use Alton Brown's brown rice recipe (google it, very easy) - he bakes it rather than using the stovetop. I *adore* it, and it's the only way I've been able to successfully make brown rice that was edible. I'd hazard a guess that you could still add the spices you want and bake it up. And with my rice in the oven I'm free to deal with whatever else I'm preparing without worrying about the rice.

Just looked at the recipe... I'd add more water, we like to use at least 2.5 c water per cup brown rice.
