Sunday - date night (out); kids had Crazy Bugs pasta mixed w/ green peas and Ian's chicken nuggets and watermelon

Monday - Salmon baked w/ ginger and garlic, Chinese noodles w/ baby bok choy and oyster mushrooms

Tuesday - I'm making that yummy sounding honey lentil dish I learned here (mixing in spinach) w/ some brown basmati rice

And I'm going shopping for the rest of the week today....No ideas yet!

Sunday was lunch out and vegetable soup with cornbread for supper.

Yesterday (Monday) was supposed to be pizza calzones and salad, but I caved and we had dinner at my parents' house. We had chicken cordon bleu, Italian green beans with onions, corn on the cob, and mashed potatoes.

Tuesday: sweet & sour chicken stir-fry
Wednesday: dinner out (v-day)
Thursday: spaghetti bolognese, salad, and pistolettes
Friday: baked chicken with mushrooms, mashed potatoes, lima beans, rolls

I meal-plan on Fridays, so that's as far as I've gotten.

OK - the rest of the week:

Tonight - chicken enchilada chili (crockpot)
Thursday - turkey pot pies (a local turkey farm makes them - awesome!) with some organic mixed veggies stirred in
Friday - out with the grandparents & kiddos - our usual Friday night circus
