I planned for a meal, then lost the recipe. I don't even remember what the recipe was for, so I can't even search for a new recipe. So now I have all this stuff and I have no use for it! What can I do with:

raw spinach
fresh mushrooms
green onions
tomatoes

What vegetarian meals can I make with these so they don't go to waste?

Spinach salad is SO great-
raw spinach, topped with mushrooms ( light saute if you like) chopped tomato and green onion mixed in raw....olive oil and a little lemon juice

yum!


OR

finely chop the mushroom and green onions, stuff inside 1/2 hollowed out tomato and serve on a bed of spinach- which you can serve raw or quick saute with olive oil, splash of white wine and salt and pepper

If you are looking for hot meals:

veggies over pasta or baked potato or polenta
-I would cook the mushrooms first, until they are browned a cooked down, then add the tomatoes cook them down a bit, add the spinach until wilted, and then add the green onions right at the end.

or a risotto, if you have lots of time to stir

a quiche if you do eggs and dairy (I would saute the veggies first so they aren't too watery)

these veggies might work in a white bean or navy bean soup-again I would add mushrooms and tomatoes earlier and spinach and green onions toward the end

When I have random ingredients and am completely uninspired or can't think of what to make, I do a Google search by typing in the ingredients, followed by the word "recipe" (i.e. tomato spinach recipe). Works every time!!!
