If you are looking for hot meals:
veggies over pasta or baked potato or polenta
-I would cook the mushrooms first, until they are browned a cooked down, then add the tomatoes cook them down a bit, add the spinach until wilted, and then add the green onions right at the end.
or a risotto, if you have lots of time to stir
a quiche if you do eggs and dairy (I would saute the veggies first so they aren't too watery)
these veggies might work in a white bean or navy bean soup-again I would add mushrooms and tomatoes earlier and spinach and green onions toward the end
