I thought I would start this. It's such a good practice for me.

Sunday: split pea soup with homemade bread
Monday: pot stickers and steamed vegetables
Tuesday: pork roast w/ potatoes and carrots
Wednesday: bbq pork roast sandwiches, sweet potato fries, spinach salad
Thursday: chicken masala with rice and nan
Friday: leftover chicken masala with rice and nan
Saturday: homemade pizza or dinner out

Lent starts Wednesday so we're meatless that day and every Friday until Easter.

M: Zesty Chicken & Tortilla bake
T: Chicken & homemade noodles, mashed potatoes
W: Homemade mac & cheese
T: Spaghetti with meat, breadsticks
F: (I'm leaving on a retreat, DH & kids at home) Something meatless that I prepare before I leave and DH can reheat.
S: Still on retreat til dinnertime...

M- spagetti/garlic bread, green beans
T-pizza night!
W-parsnip soup w/ garlicky greens, homemade sunflower cheese bread
Th-homemade mac n cheese casserole w/ veggies (making a triple batch to freeze leftovers)
F-artichoke spinach lasagna (making a double batch to freeze), homemade garlic breadsticks
Sat- mexican! (nachos, beans and rice & white bean enchiladas, also will make homeade salsa)
Sun- squash, apple & onion tart, mushroom rice pilaf

I fell off the wagon while doing an elimination diet for dd. (And we lost internet for nearly a week!) Confirmed an allergy to oats (or gluten/wheat due to cross-contamination; that jury's still out). I have no idea what to cook, for whom, or when...sigh. I'm trying to get back on top of everythig tonight. Hopefully I'll post then!

Ooh, can I play, even though I'm late? I've been menu planning since the morning sickness eased up and it's really helpful to me.

Monday, February 19 (Presidents Day): Beef stew, biscuits, with cherry pie and homemade whipped cream for desert

Tuesday, February 20 (Shrove Tuesday): Irish pancakes and sausage

Wednesday, February 21 (Ash Wednesday): Grilled cheese and tomato soup (quick meal since there's choir rehearsal and church)

Thursday, February 22: Quiche Lorraine and Salad

Friday, February 23: Cheese pizza and salad

Saturday, February 24: Hamburger pie

Sunday, February 25: Chicken breasts and gravy, brocolli with cheese for the kids, mashed potatoes, and maple pudding

2 c. WW flour
1 1/2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
2 egg whites, beaten
1 c. plain yogurt
2 ybsp. honey
1 tsp. prepared mustard
1 c. firmly packed shredded cheddar
3 tbsp sunflower seeds (shelled)

preheat oven 350 degrees. combine the first 4 ingredients in one bowl. in another bowl beat egg whites,yogurt honey and mustard together. combine wet ingredients w/ the dry and mix well. stir in cheese and sunflower seeds. pour into a lightly oiled 9x5x3 pan and bake for 45 min or until the tops looks golden.

We have been eating out just about every meal, and I'm so sick of it. Back to meal planning, starting tonight:

Tuesday - baked pork chops, rice, & salad
Wednesday - cheeseburger macaroni, lima beans, & crescent rolls
Thursday - scrambled eggs, biscuits & gravy
Friday - chicken, corn, & black bean quesadillas with Spanish rice
Saturday - out of town for lunch & dinner

Okay, I did it. Poor dh has to cook all of his own meals upon walking in the door, but I can't take care of his while running this allergy testing thing....aaargh.

Sunday - Kale omelet and brown rice
Monday - Black beans and spinach
Tuesday - Hamburger Hash
Wednesday - Chicken stew
Thursday - Shepherd's Pie with corn (we're testing corn)
Friday - Avocado and bean tacos
Saturday - Pork chops with broccoli

Monday - we had a pizza (teacher gave us a whole one leftover from dd's classroom party)
Tuesday - Cottage Pie (which is made with minced beef, as opposed to Shepherd's Pie, which is made with minced lamb)
Wednesday - leftover Cottage Pie
Thursday - Chicken stir-fry & basmati rice
Friday - Dd's choice... probably spaghetti
Saturday - Tas kebap (turkish dish... dh is from Turkey)

I have next week planned, too:
Sunday - Pea soup and sandwiches
Monday - Stoved Chicken
Tuesday - Keema Mataar (Indian lamb mince with peas)
Wednesday - Chicken & Peas casserole
Thursday - taco salad
Friday - Barbie (weather permitting)
Saturday - anniversary... out to eat... mom and dd will have breakfast for supper

Wow, so many great ideas!

T - Sausage lentil soup and homemade wheat bread w/butter
W - Fondue with meat, veggies, and bread to dip
Th - Egg tacos with black beans and homemade salsa
F - Chicken noodle soup and possibly some pumpkin bread
S - Something easy and fast, not sure what
S - Dinner at In-laws' house, usually something really yummy
M - Pasta and Trees (a la Rachael Ray), glazed carrots, and roasted cauliflower

Sure, here is it is. Sorry this is late I forgot to come back and check this thread!

Tuscan Casserole
-3 slices bread (whole wheat - torn or cubed into small pieces)
-3 tablespoons parmesan cheese (I add more)
-2 garlic cloves (finely chopped)
-8 oz mushrooms (fresh)
-2 tsp olive oil
-1 egg (beaten)
-10 oz frozen spinach (thawed & drained)
-3/4 cup ricotta
-15.5 oz canned cannellini beans
-pinch of salt
-pinch of pepper

Preheat Oven to 350. Grease or line 9x9 inch pan with foil.

Cook garlic & mushrooms in olive oil in skillet until done (about 10 minutes).

In a bowl mix spinach, beans, ricotta, egg, salt, & pepper. Then add cooked mushroom mixture and stir. Spoon into pan and even out the top. Add bread to the top and then sprinkle with parmesan cheese.

Cook until bread is getting brown, about 25 minutes. Let stand 10 minutes to thicken and then serve.
