I don't have a real recipe, but I'll tell you what I do.

I drain a can of garbanzos into the food processor. Save the liquid. Then add a nice big spoonful of tahini, 2 cloves of garlic, about a tablespoon of lemon juice, a little salt, and about a teaspoon of cumin. Whir away until it's smooth. If it's too dry, add some of the garbanzo liquid.

There you go. It's sooooo easy.

Quick, easy, and delicious!

From The New Best Recipe, p.13 (Makes about 2 cups)

Ingredients:
1 15oz can chickpeas, drained and rinsed
1 medium clove garlic, minced
3/4 teaspoon salt
pinch cayenne pepper
3 tablespoons fresh lemon juice
1/4 cup tahini
1/4 cup extra-virgin olive oil
1/4 cup water

Directions:
1. Process all ingredients in food processor until smooth (about 40s).

2. Transfer to serving bowl, cover, and chill for at least 30 minutes so flavors meld. (Can be refrigerated for up to 2 days.)

I pretty much do what BetsyS does, although I often cook dried beans instead. Also, my SIL substituted Annies Goddess Dressing for the Tahini once and it turned out FANTASTIC. VERY YUMMA! So we've been doing that....

I think the key is plenty of lemon juice and garlic tho!

Oooh.... *hand up* Can I share?

This is my all-time favorite recipe for hummus. Something about the parsley and green onion that make it extra yummy and "fresh" tasting, I think.

Do add olive oil/water to thin enough to blend it up. I also garnish with paprika. I think I also cut the tahini way back...like only put a few TB.

I pretty much do what BetsyS does, except I also add in some good quality extra virgin olive oil.

Other variations I've tried include
- adding in a bit of sesame oil
- adding chipotle chili powder
- mixing in roasted red peppers

Mmmm, now I want to make some hummus!

This one is great, without tahini:

1 large clove of garlic
1 can (15.5 oz) of garbanzo beans
3 tbs. sour cream
3 tbs. lemon juice
1/2 t. salt
1/4 t. ground cumin
1/4 c. extra virgin olive oil

Mince garlic in the food processor. Add everything else... but save the olive oil. Process until ALMOST smooth. With machine still running add the olive oil until mixture is smooth.

I like to serve with baked pita "chips"
Put the pita slices on a cookie sheet, spray with olive oil spray and sprinkle with salt and pepper. Cook for about 5 minutes at 400 degrees.
Up
