Other than freeze them or make chicken salad? I had DH grill the whole package that I bought on sale this week, so we have leftovers. Stumped for ideas, though...also they are a wee bit tough as we overcooked slightly.

You could shred it and make barbecue chicken sandwiches, or you could chunk it and add it to a great tossed salad, or you could make strips and add it to tortilla shells (a la wraps from McDonald's).

I just made an awesome stir fry centered around chicken. Maybe get your veggies going and then do a quick steam of the thinly sliced chx w/some fresh ginger and sesame oil. Toss it w/veggies and serve over rice.

Thanks for the replies! Here's what I did: I figured since they were a bit tough a day in the crockpot would do them good. So I threw them in whole with some bbq sauce, a can of tomato sauce, and some v-8. (I needed to add a lot of liquid to get the crockpot half-full.) I figure they will fall apart on their own. When they are done, I can drain off some of the excess liquid and made "baked" beans from a can with it, and add a little more bbq sauce to the shredded meat and have it on rolls.
