How about 24 hour salad? I don't think I am allowed to post the recipe (copyright infringement?) but it is in the latest issue of cooks country magazine. you layer different ingredients in a glass/plastic bowl overnight & take it & mix it, eat it the next day.
has ingredients....bacon, blue cheese, celery, lettuce, peppers, eggs, dressing..

Here's a recipe I can list, it's mine & my favorite summer dish

1 lb pasta, short like fusilli or cavatappi, or farfalle, cooked
1/4 cup to 1/2 cup olive oil
chopped basil
2 pints cherry tomatoes, any kind, my favoriet are sun gold or you can use 4-5 large heirloom tomatoes, again your favorite kind, or try something new, or a mix(chop tomatoes, half cherry tomatoes)
2lbs fresh mozzarella cheese, cubed

add tomatoes, salt & olive oil to bowl to marinate, add mozzarella, cook pasta, add hot pasta to bowl, add chopped basil & mix
serve!

This isn't exciting, but I love it when eggplant come into season. I just bake one up in the oven, peel it, salt it, and eat it. My dh travels frequently, and when he's out of town, this is what I eat for supper. Don't knock it till you try it.

I've really been enjoying taco salad in the summer this year and last. I basically make all the ingredients for burritos or tacos and pile them on a big bed of lettuce. We each have a few chips with it and call it good. I think we usually use black or pinto beans, sometimes ground turkey, shredded cheddar, plain yogurt, homemade salsa, etc. Hits the spot!

My favorite summer foods are asparagus and raspberries. I usually roast the asparagus in the oven with some olive oil and Herbamare, but dd likes it plain!

Peaceful mama to three blissfully-birthed and incredible small people: dd10, dd7 and ds5. Always awed and so thankful to be a midwife.
