Some quick things we like, hope this gives you some ideas:
-Homemade fish "nuggets" (just buy tilapia filets, cut into bit size pieces, mix a little milk and egg in a bowl, dip fish into that mixture. then in a ziploc bag mix 1 c bread crumbs and 1/2c parm cheese, shake the nuggets into the bag, bake on 350 about 15 mins)
-Rotissiere chicken - buy one of these and use it for other meals instead of having to cook the chicken
-Quesadillias - fill with whatever you like, like the chicken and some cheese or beans and cheese, etc.
-Tortelini (always good for little fingers)
-Ravioli Lasagna (layer ravioli, sauce, and cheese and bake)
-Homemade chicken nuggets (same as fish, cook a little longer)
-Breakfast for dinner
-Sandwiches (make them interesting with new sauces, breads, avocado, etc.)
