I have a crockpot, electric burner (I think it is a hot plate?), electric griddle and microwave.

It seems like we always eat the same things at our house. DS is 14m, so he's happy to eat whatever, but I am really getting sick of ground beef/chicken dishes! DP will *not* eat a meal w/o meat in it and considers fresh fruits and veggies "junk" (of course, we also live in Alaska, so those things are super expensive!). It seems like we can't come up with a compromise (and he won't buy anything on my grocery list, just canned chili, tv dinners, chips and junk food, then he complains that I should be eating healthy to try to lose weight! How can I lose weight if I can't plan out meals that *are* healthy?! sorry, turned into a mini-rant there)

Here are some of the meals I have done to death:
spaghetti
chili
sauteed chicken, fried chicken (too hard on a hot plate, it takes me 45 min to only boil water on it, oil is a nightmare)
chicken soup (w/ rice, noodles, etc)
meatloaf
stir-fry (which dp won't eat)
fajitas & tacos

dp won't eat: mushrooms, peppers, grilled cheese (not "real" enough for him), most soups, or anything that smacks of "health food"--he won't even eat homemade bread--he likes wonder bread, yuck
Any suggestions would be appreciated. TIA!

Anyone have any good recipe sites they want to send me to?

meat with any kind of liquid works well in the crock pot, chicken, pork, beef, whatever, with different salad dressings, a jar of salsa, a jar of BBQ sauce, etc. Many different combinations are possible.

chicken and dumplings is a popular and cheap meal at my house. For recipes, I use allrecipes and epicurious a lot.
