OKay, this isn't my plan for next week, but it's what I made this week.

Monday-Pasta sauce(jar- with me adding pureed squash and carrotts) with Penne

Tuesday-Org. Turkey hot dogs

Wednesday-Shepherd's Pie made with turkey,summer squash and carrotts.

Thursday-Chicken stew

Friday-Mexican takeout.:

Saturday-DH is grilling kabobs-steack for him and the DC,Chix for me with tons of vegies for all of us.

I needed comfort food this week-DD has been DXed with Anxiety/Panic, and my Mom had surgery to remove a tumor on her Thyroid. Looking back, wednesday and Thursday's dinners were to labor intensive for me.

W&M- I have loved looking at your food blog...making plans to include something for next week. THanks!

Today/sun: food from indo/american festival lunch/dinner
Mon: leftovers from barbeque, pasta salad, hamburgers

Tues: chicken/green bean stir fry w/ rice
wed: BLT & some type of potato
Thurs: pesto w/ pasta, tomato salad
fri: roasted peears w/ ginger/maple syrup, lettuce, dressing not sure what else

I buy all my ingredients for meals but don't plan which day I'll make them. Just whatever I'm in the mood for. And we both work full-time so I only have to plan for dinner.

So this week we're having:
That lovely quiche recipe from wife&mommy (I'll actually be making that in a few minutes!)
Tacos
Baked ziti
Spagetti
Fish sandwiches (just frozen fish fillets, it's my whip-up meal for when I don't have a lot of time) and green beans
Peirogis and steamed broccoli with cheese sauce (another whip-up meal)
French toast and scrambled eggs
Chicken and stuffing casserole (completely unhealthy but DH loves it)

I'll probably stop by the farmer's market on Wednesday and buy some fresh veggies, too.

OK, I'll play! I just did this today, and it took me, like, hours It's going to be a hectic week though, so I really need the stability of a plan. Although, I just reread my whole plan, and wow, there's a lot of cheese in there Mmmmm...cheese!

Monday
Breakfast: Baked oatmeal, fruit
Lunch: Grilled cheese on fresh bread, carrots and dip
Dinner: Coco-pina crockpot ham, corn on the cob, fresh bread


Tuesday
Breakfast: Porridge, fruit
Lunch: Noodles and butter, veggies and dip
Dinner: Turkey Cheese Broccoli Pockets (extra biscuit dough for Wednesday)

Wednesday
Breakfast: Waffles, smoothies
Lunch: Ham and cheese sammiches, veggies and dip
Dinner: Cheesy chicken breasts, stir-fried asparagus, cheesy biscuits

Thursday
Breakfast: Yogurt, granola, fruit
Lunch: Tuna melts on cheesy biscuits, veggies and dip
Dinner: Spaghetti and sausage, salad

Friday
Breakfast: Muffins, fruit
Lunch: Leftover spaghetti, broccoli and dip
Dinner: Bean/cheese/corn quesadillas (leftover chicken from Wednesday?)

Saturday
Breakfast: Baked oatmeal, fruit
Lunch: Cream cheese and jelly sandwiches

I don't plan out days I'll cook meals. I just make a list of enough meals to last and then cook by mood. If not I end up with a lot of leftover stuff I never cooked. For the next 2wks we'll be cleaning out the pantry so some of the meals I'm planning I haven't tried yet. Here's our list:

Breakfasts: cereal, oatmeal, eggs, bacon, yogurt and granola, toast, pancakes, fruit bars

Lunches: chicken noodle soup, veggie soup, sandwiches, pb/j sandwiches, ramen noodles, pizza, beef stew, sloppy joes

Dinners: Southern Lima beans w/rice, Veggie soup, Cajun blackeye pea soup, Italian style kidney beans, Lemon-pepper chicken breasts, grilled chicken breasts, tuna casserole, tuna salad, beef stew, meat & potato soup, chicken spaghetti

Sides (most won't need sides): oriental style rice, alfredo noodles, macaroni, blackeye peas, other veggies

Snacks: pb crackers, crackers w/ cheese, granola, 100 cal. snack packs, pretzels, fruit, chips, popsicles, applesauce, jello


Once I finally get rid of all the stuff in the house now (about 2-3wks worth) I can buy stuff we'll eat again and get more creative. I still have to find something to do with what will be left after these meals!

Our meals this week are on the go becuase we are going out of town but I am taking stuff with us. Just some of our favorites that are easy and able to be in the fridge for a while. Tonight is leftovers and then the rest of the week we will probably eat out for lunch and have what I brought in the hotel for dinner, which will be red beans & rice w/ veggies, ham & pineapple couscous, and chicken pasta salad. Lots of fruit I'm bringing too since that is easy. I'm also bringing muffins for breakfasts.

As a matter of fact, I do! I'll have to come back with the biscuit dough recipe though--it's on my old computer. I haven't tried the turkey cheese pockets yet, but they sound yummy and easily adaptable to other items. They're a Kraft Food & Family recipe that I've genericized.

Turkey Cheese Pockets
Prep Time: 15 min
Total Time: 27 min
Makes: 10 servings, one piece each

2 oz. (1/4 of 8-oz. pkg.) cream cheese, softened
1 Tbsp. mayonnaise
1 tsp. Dijon mustard
4 slices smoked turkey breast, finely chopped
1/4 cup shredded mozzarella cheese
1 can (7.5 oz) refrigerated biscuits (10 biscuits) (I'M USING THE CHEESY BISCUIT DOUGH)

PREHEAT oven to 400°F. Mix cream cheese, dressing and mustard in small bowl until well blended. Add turkey and cheese; mix well. Set aside.
PRESS or roll out each biscuit to 3-1/2-inch circle; top evenly with cream cheese mixture. Fold each in half to enclose filling. Firmly press edges of dough together to seal. Place on baking sheet.
BAKE 10 to 12 min. or until lightly browned. Serve warm.

Substitute
Prepare as directed, using cubed ham and shredded cheddar cheese.

Cheesy Biscuits

1 1/3 cup flour
1 1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/3 cup buttermilk
1/2 teaspoon salt
5 tablespoon butter, sliced thin
1/3 cup sharp cheddar, grated
1 egg

Stir baking powder, soda and salt into flour and mix well. Cut cold butter (you can freeze it for best results) into flour mixture until only chunks the size of walnuts remain. Add cheese. (A nice addition is to add some chopped fresh rosemary to the crust but this is optional). Beat the egg with the buttermilk and stir into the dough. Gather the dough into a ball, place in the refrigerator in a plastic bag for 10-15 minutes to rest. This prevents gluten from developing.

It's important not to overwork the dough or you will cause it to become tough. Roll dough out on board to 1/2 inch thick. Cut out rounds of dough with a 2-3 inch biscuit cutter.

Bake at 450 for 10 minutes or until lightly browned.

NOTES: This is actually a recipe for a biscuit crust for my chicken pot pie--I just happen to like it for biscuits too. It may not be the best recipe out there, but it's the one I use I usually go a tad heavy on the buttermilk to make them a bit fluffier. Tonight I made them entirely with white whole wheat flour, so I'll have to update on how they came out.

This week I'm not planning for certain days since my DH is home and tends to switch things around on me. But here's what we're having:

-Grilled ribeye steaks, baked potatoes, grilled corn on the cob, salad, rolls

-Creamy Italian crockpot chicken with rice, butter beans or lima beans, salad, crescent rolls

-BLTs & baked fries

-Beef stroganoff, green beans, garlic cheese biscuits

-Bean soup & biscuits or cornbread

-Chicken pasta salad (if I can convince DH to eat this)

Here are ours for this week. Lunches are leftovers for the most part and breakfast is just something simple, except where noted and then I have something specific to make that day.

Monday:
B - Omelets
D - Organic Steak, Sweet Potatoes, Broccoli

Tuesday:
D - Veggie Fried Rice

Wednesday:
D - Meatloaf, Mashed Potatoes, Broccoli

Thursday:
D - Whole chicken, Carrots, Potatoes

Friday:
D - Spaghetti, Salad, Rolls

Saturday:
B - Sausage Gravy & Biscuits
D - Chicken Pot Pie

Sunday:
D - Leftovers

I'm not so advanced as to plan breakfast or lunch yet but here's our dinners for this week...

M-big salads w/ black beans & lots of veggies

T-garlic pasta with broccoli & mushrooms

W- TJ's frozen Greens with Envy (aspagus, broc, spinich & edamame) stir fried over rice or soba noodles

Th-fresh grreen beans, boiled white potatoes & TVP in gravy

F- fried rice with veggies & egg

I also have mushroom & ginger barley and carrots as an alternate in case something planned doesn't sound good that night otherwise I'll just save it for over the weekend/next week.

I'm with you! So far we only plan dinners. Breakfast is toast or cereal and yogurt or fruit, and lunch is leftovers.

But here are our dinners for the week:

Wednesday: Chili-lime chicken and rice (at a friend's house)

so my DH was supposed to get a bonus check friday and it did not appear, so this weeks meals are planned using foods on hand (I am going to the grocery tomorrow with 25$ to get potatoes, bread, sausage and the rest on other fruits and veggies) I have on hand stuff for rice krispie treats and choc chip cookies so i will make those tomorrow for our treats this week.

Saturday (today)

Brunch - eggs and grilled cheese sand.
Dinner - whole chicken, carrots, mashed potatoes

Sunday

B-eggs, bacon, biscuits
L- beanie weinies, apple
D- pizza with in-laws

Monday
B-sausage biscuits
L-PB & J sandwiches, fruit
D- chicken hash with potatoes

Tuesday
B-muffins, bananas
L-leftovers, fruit
D-Corn dogs, tater tots, peas

Wednesday
B-sausage biscuits
L-tuna salad w/hardboiled egg, fruit
D-spaghetti garlic bread

Thursday
B-muffins
L-leftover spag. fruit
D-eggs, bacon, biscuits

Friday-pay day thank goodness!
B-sausage biscuits/muffins
L-turkey and cheese sandwich, fruit
D- out to eat

Thank goodness i keep a well stocked pantry, and for my deep freeze! they said he 'should' get that bonus check by tuesday, but we are planning as if he won't, just in case. Hope you all have a good week ahead!
